Cranberry Walnut Oatmeal Cookies



PREP TIME:

12 min

YIELD:

3 dozen cookies

INGREDIENTS:

Crisco® Original No-Stick Cooking Spray 1 cup Pillsbury BEST® All Purpose Flour
3/4 cup Crisco® Butter Flavor All-Vegetable Shortening 1 tsp. baking soda
OR 3/4 Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening 1 tsp. ground cinnamon
3/4 cup sugar 1/4 tsp. salt
3/4 cup firmly packed brown sugar 2 3/4 cups old-fashioned rolled oats
2 large eggs 1 cup dried cranberries
2 tsps. vanilla extract 1 cup chopped walnuts
  • Crisco® Original No-Stick Cooking Spray
  • 3/4 cup Crisco® Butter Flavor All-Vegetable Shortening
  • 3/4 cup sugar
  • 3/4 cup firmly packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup Pillsbury BEST® All Purpose Flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 2 3/4 cups old-fashioned rolled oats
  • 1 cup dried cranberries
  • 1 cup chopped walnuts

PREPARATION DIRECTIONS:

  1. HEAT oven to 350ºF. Coat baking sheets with no-stick cooking spray.

  2. BEAT shortening, sugar and brown sugar in large bowl at medium speed of electric mixer until blended. Beat in eggs and vanilla. Combine flour, baking soda, cinnamon and salt in small bowl. Beat into shortening mixture until smooth. Stir in oats, dried cranberries and walnuts. Drop by rounded tablespoonfuls about 2-inches apart on prepared baking sheets.

  3. BAKE 10 to 12 minutes or until light brown. Cool on baking sheets 2 minutes. Place on cooling rack to cool completely.

Thanks for sharing.  My cookie jar is empty and I have all the ingredients on hand.  Anything with walnuts and cranberries has to be good.  Oatmeal cookies are among my favorites (and good for you too)

THANK YOU, SUE , I just tried this recipe and it's super.  What a hit.  This is one I'll be baking again and again.    Only problem is that I try to give away all the cookies I bake.  I ate way too many of these.

Thanks for the wonderful sounding recipe.  If you have a Kroger store in your area, there is a Kroger brand of this cooky available in the break and bake area of cookies in the refrigerated cooler area.

Not sure why I did not see this sooner but I will be making these soon.  I love keeping cookies or cookie dough on hand in the freezer.

Sue - Thank you for posting this recipe, it sounds delicious..  My only problem is I don't know which fruit to try first - cranberries or cherries.
