Hi Nancy, those cookies look great! Are those the cooling racks you were talking about? Some how I remember my mom having some like that.Those are much better than the others.

Hi nikki - The ones on the left front are Chocolaty Caramel Thumbprints ....

They are SO pretty, taste so good
They are SO expensive to make, take so long, so much work, such odd things to buy.
I don't make many - just the one small batch and use them to "decorate" a plate of assorted cookies

The chocolate cookies in the middle are Good!!
Again a lot of work and expensive to make but these are a major hit.

CARAMEL CHOCOLATE COOKIES
375 degrees -- greased sheet -- 7 - 10 minutes -- 4 dozen
2 1/2 cups flour
3/4 cup cocoa
1 tsp baking soda
1 cup sugar
1 cup packed brown sugar
1 cup butter/margarine softened
2 eggs
2 tsps vanilla
1 cup chopped pecans
4 oz vanilla candy coating

Combine flour, cocoa and baking soda - set aside.
Combine sugars and butter, beat until light and fluffy
Add vanilla and eggs - beat well
Add flour mixture, blend well and stir in 1/2 of the pecans

Heat oven to 375. Shape 1 tblsp dough around a Rolo. Press one side of
each ball into remaining pecans. Place nut side up, 2" apart.
Bake at 375, 7 to 10 minutes until set and slightly cracked.
Cool 2 minutes and move to rack. Cool completely,
Melt the vanilla candy coating (I use heavy plastic bag in microwave)
Drizzle over cookies.

LOL -- the others are the second best, second most popular cookie I make .... Ice Cream Sundae Cookies ... I add macadamia nuts.

Nancy, your picture reminded me of my mother, who has been gone a feew years now. Every week she baked cookies for her grandkids, even when they were in college, she always had plenty for the church youth, neighbors, or just anyone. My favorite ones are the carmel thumbprint ones and my mom would make them at Christmas or only special times, like you said they are costly and take more time. Seeing the variety on the rack in your picture brought back the memory of her kitchen, and when I saw the carmel thumbprints I could not believe it, I was transported back in time!!!!!!!!!!! Oh, Debi, thank you, you are so kind.
I don't have kids or grandkids but there are lots of people I love to bake for.
And I also love trying a new recipe.

Isn't it funny that my mother didn't like to bake AT ALL?

Nancy, I checked out the recipe and it does look good. A bit involved but not so much that it is not "doable". I suppose you could "cheat" and make the cookie base as directed and rather than using the caramel mixture you could use a "rollo" candy in the center. That would give you the caramel and the chocolate. A bit less involved and it would save time in unwrapping all the little caramel squares. And there are never enough in the bag because I have to check every once in a while to make sure they are "fresh". By the way that is a great site for cookies and other tasty delights.

Nikki -- if I do it - anyone can. lol. It's just not an easy, fast one.
And they are so very pretty on a plate. For this batch I cut too much from the corner of the plastic bag to drizzle/squirt the chocolate. It's much prettier if the lines of the melted chocolate are thin.

All your cookies look delicious. You are truly an artist. I have been making a few cookies the past few days as we are going to a party on Sunday evening, and as usual I am assigned dessert. I did make a pumpkin cheesecake, but am also bringing a plate of assorted cookies and peanut brittle. I made spritz, ammaretto bars, a chocolate cookie with a marshmallow on top with chocolate drizzle and crushed peppermint candy, and a new recipe I found on the Food Network web site...real easy with only 5 ingredients by Claire Robinson. It is a graham cookie base with pecans brown sugar and butter mixture on top, baked and then spread with melted bittersweet chocolate. This one is my newest passion.

Sorry I've been slow posting anything, but I am in a big mess right now. We are having hardwood floors put in, so our kitchen, living room, and dining room are a disaster zone. Plus we have plastic over everything. I had to empty my china cabinet as well as a big bookcase. We have boxes in every room.

Turtle Graham Bars courtesy Claire Robinson of the Food Channel

Approx 14-15 graham crackers ( if each cracker is 5" x 2.5")
1 cup (2 sticks) unsalted butter
1 cup packed dark brown sugar
1 cup chopped pecans
Kosher salt, to taste
12 oz. dark chocolate, finely chopped ( I use 60 % or bittersweet)

Preheat oven to 350 degrees F.

Line a rimmed baking sheet with a silicone mat. Arrange the graham crackers in a single layer on the lined baking sheet.

Put the butter, brown sugar, pecans, and a pinch of salt in a saucepan and bring to a boil. Boil for 2-3 min, stirring constantly. Pour the butter mixture evenly over the graham crackers and bake for 15 min. Remove and set aside.

Meanwhile, melt the chocolate in a glass bowl over simmering water. Pour the chocolate over the toffee covered graham crackers and spread evenly. Chill completely in the refrigerator for about 40 min. Cut into bars. (Note : the bars will be irregular and look sort of like a brittle candy)
