Cookie Exchange

My husband and I attend a cookie exchange every year.  I LOVE baking cookies and have several favorites which I've brought throughout the years.  The problem is that even though I like them and think they are great, they aren't usually very popular with the other attendees.

Here's what I've made:
Mint Chocolate Chip Bonbon Cookies
Russian Teacakes aka Mexican Wedding Cookies
Spritz Cookies

My husband doesn't really like cookies or have any favorites, but his are always very popular.  So far, he's done confetti meringues (with M&Ms), Peanut Butter Cookie Cups with a Reese's Mini Cup in the center and Butter Toffee Cookies. 

I would really like to make gumdrop cookies, but everyone turns their nose up at them when I mention it.  I think it's because I'm from the South originally, but now live in California and no one has ever heard of gumdrops.  My husband has absolutely no idea what to bring, but I want something easy because I'm usually the one that has to make most of them.

Do y'all have any suggestions?  Drop or slice cookies would be good as I won't have a lot of time to spend on baking them and I need a TON!

I made my Mexican Wedding Cake (I call them Sandies) cookies two days ago.
 Here's a great recipe for a wonderful cookie  (the recipe is one I found on the back of a bag of Nestles White Morsels

WHITE CHIP ISLAND COOKIES
makes 3 doz ..... ungreased sheet ....375 degrees ....bake 8 - 11 minutes

1  2/3 cups flour
3/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

3/4 cup (1 1/2 sticks) butter or margarine
3/4 cup packed brown sugar
1/3 cup sugar
1 tsp vanilla
1 large egg

2 cups Nestles White Morsels
1 cup flaked coconut
3/4 cup chopped macadamia nuts

Preheat oven to 375
Combine flour, baking powder, baking soda and salt in a small bowl.
Beat butter, brown sugar, sugar and vanilla until creamy.
Beat in egg.  Gradually beat in flour mixture.
Stir in morsels, coconut and nuts.
Drop by rounded tablespoon onto ungreased sheet.
Bake 8 to 11 minutes or until edges are lightly browned.
Cool on baking sheet for 2 minutes.  Remove to wire rack to cool completely.

I love cookie exchanges. I make the basic, nothing really too uncommon. Can never go wrong with sugar and peanut butter

I recently made these and they were fantastic! I know the combination seems odd at first, but the dark chocolate and sour cherries really play well off each other. My fiance doesn't have a serious sweet tooth like me, but he asked me to make these again!

Dark Chocolate Cherry Cookies

1 3/4 c all-purpose flour
1 1/4 c cocoa powder
2 tsp baking soda
1/4 tsp salt
1 1/4 c unsalted butter, room temperature
1 1/4 c granulated sugar
3/4 c firmly packed brown sugar
2 large eggs
1/4 tsp vanilla extract
12 ounces bittersweet chocolate, coarsely chopped
9 ounces dried sour cherries

Preheat 350 degree oven. Sift together flour, cocoa powder, baking soda, and salt. In a separate bowl, cream the butter and sugars until fluffy. Add the eggs and vanilla to the butter mixture and beat until well combined. Add the flour mixture and beat on low speed until just combined. Fold in the chocolate and cherries. Drop about 1/4 cup of dough to form each cookie on an ungreased cookie sheet, leaving 3 inches of space between cookies. Bake until puffed and cracked, 9 to 11 minutes, rotating sheets halfway through. Transfer to a wire rack to cool. Enjoy!

 I'll be trying that very soon.
Wish I had time right now .... I have all the ingredients.
I sure hope you post more interesting recipes for us.
