I freeze cookie crumbs all the time. There is or was a cookie outlet near us and my husband would buy bags of "broken" cookies for a $1.00 a bag. When we got home I would take out the broken ones and put them in the blender or processor and then freeze the crumbs. I follow recipes for crumb crust pie shell but I omit the sugar that is called for in the graham cracker crust recipes. I figure there is enough sugar in the cookies. It is also a good base if you want to add coconut or other nuts to the crust, again omit sugar. I also use them for part of the crumb topping for crisps. I have added to pudding when making "dirt cups". I also have a recipe for a cake that calls for 12 ounces of vanilla wafers crushed. I use the cookie crumbs in place of the wafers. I have posted the recipe for a Vanilla Tea Cake in my recipe box. It is the recipe that calls for the crushed wafers. Very good cake, interesting ingredients and odd baking time and temperature. Give it a try.
