Cookie butter is a peanut butter-like spread sold at Trader Joe's. It's made from Belgian cookies and tastes very similar to ground up cinammon graham crackers. It's delicious on its own and is always a top seller at Trader Joe's. It's also sold online through Amazon. I decided to make an ice cream from it and adapted a peanut butter ice cream recipe I found online. The results turned out fantastic; it's one of the best ice creams I've ever had!

Cookie Butter Ice Cream

Ingredients

1 (14 ounce) can
sweetened condensed milk
1 (12 ounce) can evaporated milk
1 1/4 cups whole milk
1/2 cup cookie butter
2 Tbs white sugar
1/2 tsp vanilla extract

Directions

1. Combine sweetened condensed milk, evaporated milk, whole milk, cookie butter, sugar, and vanilla extract in an ice cream maker. Stir until sugar dissolves. Freeze according to manufacturer's directions until it reaches soft-serve consistency.
2.
Transfer ice cream to a one- or two-quart lidded plastic container; cover surface with plastic wrap and seal. For best results, ice cream should ripen in the freezer for at least 2 hours or overnight.

**This ice cream can also be made without an ice cream maker as follows. Combine ingredients in a food processor; process until smooth. Cover and freeze, checking every thirty minutes and blending for a minute or so each time, until the ice cream is set. Let freeze for an additional two hours or overnight. Note: I've used this process and it can take several hours to complete.

I have a jar of Biscoff spread in the cabinet that I have yet to try.  I have been looking for a recipe...I don't usually make ice cream so this will not be top on my list but I guess I will do a search for more recipes....(I will report back...)
