The recipe I use for oatmeal cake calls for pouring boiling water over the rolled oats and letting them set a while. They come out the consistency of cooked oatmeal. If you'd like that recipe I'll dig it out and post it for you. It is one of my favorite cakes. You don't have to make frosting as it has a broiled topping consisting of butter, brown sugar coconut and cream spread on the hot cake and put under the broiler for a bit.

My Mom used to make this recipe and it was a family favorite when growing up. Thank you so much for posting this recipe. I plan on making it soon.

Lazy Daisy Oatmeal Cake 1 1/4 cups boiling water 1 cup oats 1/2 cup butter 1 cup sugar 1 cup brown sugar 1 t. vanilla 2 eggs 1 1/2 cups flour 1 t. soda 12 t salt 3/4 t cinnamon 1/2 t. nutmeg Pour boiling water over oats; cover and let stand for 20 minutes.Beat butter; gradually add sugars and beat until fluffy. Blend in vanilla and eggs. Add oats to mixture; mix well. Add dry ingredients that have been sifted together. Mix well. Pour into greased and floured 9" square pan and bake at 350 for 50 to 55 minutes. Do not remove cake from pan. For Frosting: Combine 1/4 cup melted butter 1/2 cup brown sugar 3 T half & half 1/3 cup chopped nuts 3/4 cup shredded or flaked coconut Spread evenly over cake and broil until frosting becomes bubbly.
