Welcome, Do a search on All Recipes or this one for Granola bars. There are plenty of healthy versions. I think there is also a Healthy America site, Weight Watchers may also have a recipe as well. Sweetened Condensed milk is quite loaded with sugar, there is a low fat version but I have yet to see a sugar free or low sugar version. I do have a recipe for making sweetened condensed milk you could try that and substitute Stevia or Splenda for the sugar that may work. Sweetened Condensed Milk 1/3 Cup boiling water 4 Tb butter 3/4 Cup sugar 1/2 tsp vanilla extract 1 Cup powdered milk Using an electric mixer blend together water, butter, sugar and vanilla. Add powdered milk and blend until thick. Store in refrigerator. This recipe makes the equivalent of one 14 ounce can of sweetened condensed milk.

....Nikki - thanks But, that's a ton of work to come up with a thixotropic - that has the same sugar as a can already on the shelf? I gather it is in fact the sugar that made my first batch really chewey. I would rather not add more sugar, the fruit provides plenty - for me.
Maybe I'll wonder off and find a way -other than gellatin- to make a binder/stiffener without using sugarred milk products. Cheers.
