Well I made the Red Raspberry Bars. I did make a few changes. I used a Jam that I found at Aldi's in place of the Raspberry. It is Called Fruits of the Forest. Lower sugar jam. And it has Cherries, Blackberries, Raspberries in it. I tried a bar and it is a keeper recipe! I think it would be better using the Dark Chocolate Chips. I also decided that I would make a Date Bar. So this morning I simmered my dates. Did not have enough dates so I added some dried figs. Very good mixture. They are in the oven now. Pretty much like the Red Raspberry Bars and I just may keep this crust mixture as the base of the Raspberry Bar. It has Oatmeal in it so I can delude myself into thinking they are a bit healthier than the others. I also decided that the bark I made just wasn't quite right. The smoked almonds were not staying on even though I sort of pressed them in. So I melted the whole batch down, added more almonds and dropped them by little spoonfuls onto parchment. I now have a whole container of chocolate covered almond mounds. About 2 or 3 almonds to a drop. So it is just a little bite. I had to do a quality control check and the almond drops are also a keeper recipe and I think I like the drops rather than the bark. Easier to package and it is just the perfect bite. Will have to "report" on the date/fig bars later as I just now took them out of the oven.

Thanks for the info Nikki. I'll have to check Aldi's for the jam. They used to have raspberry but I haven't been able to find it for a while. Your substitute sounds good.
