Hi BLAIR ; after my brain injury, I "braveyy" took on the challenge of  making  homemade chocolate pudding; w/o my recipe books which were still  in California while Iwas then inBoise, Idaho
.Hubby drove back to California for my cookbooks & while he was gone,I made him this" "reward" : Iworked from memory.
Hubby and sons were delighted;me tooKissCool
CHOCOLATE PUDDING   Serves 4 or one (my)husband

INGREDIENTS:
__one  pint (2 cups)of  whole or low fat  (fresh)milkThe highrer the fat content o f the milk, the richer your pudding will be
__2TBS cornstarch
__1-2TBS cocoa powder to taste[ themoreyu use, hemore sugaryuwillprobably needWink
 __1/4 cup sugar or  equivalent of substitute, to taste
DIRECTIONS:
Put cornstarch & cocoa powder  in a small (qt) mixing bowl
 slowly wisk in mlik till alll lumps are broken down.
Bring to a boil over medium heat, stiring til it thickens
 Stir in sugar or substitute ti l it is disolved.

Allow to coo, slowly to room temperature.Stir &  pour into  a  pint bowl or 4 custard cups; 1/2cup each.
 Cover w/ waxed paper or lids, to prevent skin from forming as it cools .
Chill  in refrigeator, several hours, till  thickened & set.Then  divide = (1/2cup each) into dessert dishes
Serve warm or chilled; topped w/whipped cream or topping, if desired.
