my son's m.i.l makes fried rice at every family dinner---------- of course they don't call it "chinese" because most of them don't like chinese food----------------they call it gee's rice------------------she actually fries her own chicken breasts on the bone and then chops it into the mixture-------but she does use all of the other ingredients for fried rice that you've mentioned---------------she makes it in one of those oversized electric skillets-----------maybe 6 qt----------and there is never any leftovers
