This is Clinton Kelly's Ginger Orange Chicken with Coconut Rice. 
For the chicken....
1 Cup Orange Marmalade
1 piece fresh ginger, 1 inch, peeled and grated. 
3 Tb olive oil
6 Chicken thighs bone in skin on *See note below*
1 1/2 Cup Orange Juice
1 Cup white wine *See note below*
1/4 Cup brown sugar
chopped peanuts for garnish *see note below*
salt and pepper to taste
For the rice..
2 Cups white rice
2 1/2 Cups water
1 can, 13.5 ounces coconut milk 
1/2 Cup toasted coconut
1/2 Cup golden raisins *see note below* (soak raisins in warm water for about 5 minutes.)
3 scallions sliced

Pre heat oven to 375 degrees F. 
Heat oil in Dutch oven, large deep skillet will work.
Brown chicken well. 
In a bowl mix marmalade and ginger. 
Spoon mixture on chicken, skin side up.
Combine wine, orange juice and brown sugar. 
Pour into pan but do not cover the chicken with the liquid, should come about 1/2 to 3/4 way up the chicken.
Bake 40 minutes. 

For the rice
Rinse rice. 
In pan place rice, water and coconut milk. 
Bring to a boil and reduce heat, comer and simmer until rice is done about 20 to 25 minutes. 
Stir in coconut, raisins and scallions. 

Serve chicken with rice. Sprinkle with chopped peanuts.
If the sauce for chicken is loose heat until reduced. *see note below*

My notes...
I used chicken broth rather than white wine. 
I did not have golden raisins and just used regular raisins.
Rather than reducing sauce I made a slurry of cornstarch and a bit of the orange juice mixture that I did not pour into the pan. 
Rather than garnishing with peanut, that are no where else in the recipe I toasted a bit more coconut and sprinkled some of that on top. 

A few other things I am going to do when I make this next..
I am going to add in a red pepper and a sliced onion when browning the chicken.  I think it will add to the color and flavor. 
I also think this needs a bit of heat so I will either add a jalapeno pepper or a sprinkle of red pepper flakes.  I think the sweetness of the dish calls for some heat.

It could use the reduced sugar.
Or if you really want to use sliced orange rinds along with some lemons to get the tartness.  The amount of brown sugar as well as the orange juice does make this a rather sweet sauce.  I also think it could use a bit of heat either some red pepper flakes or a sliced jalapeno pepper. 
Served with the coconut rice it is very sweet.
