 I saw the picture of these and I have to make it! Thought I'd share the picture and make all of you say what I did! (yummy)

 

Cheery Cherry Cobbler Cupcakes


Cheery Cherry Cobbler Cupcakes

Ingredients

  • 1 (12.75 ounce) box Cinnamon Toast Crunch Muffin Mix
  • 2/3 cups milk
  • 1/4 cup coconut oil or butter, melted
  • 2  eggs
  • 1 (21 ounce) can cherry pie filling

Directions

   Preheat oven to 425 degrees. In a large bowl, whisk together the muffin mix (setting the streusel packet aside for later), milk, melted coconut    oil or butter, and eggs until smooth.
  1. Spray the top of a muffin tin with nonstick baking spray. Then, spoon batter into 12 muffin tins lined with cupcake wrappers.
  2. Scoop 2 tablespoons of cherry pie filling on top of the batter in each cupcake wrapper. For best results, use more cherries and less of the sauce.
  3. Sprinkle streusel topping over each cupcake.
  4. Bake in preheated oven for 15-20 minutes, or just until the edges of the cupcakes are golden brown and the centers are set. Cool before removing from muffin tins and serving.

where can i find this mix?      what brand
i love cherry pie    
but my mind is screaming  "peaches"

do you think it could be frozen?

These look great.
I bet they would be just as good with apple pie filling or blueberry.
I also wonder if it would be good for a Sunday Brunch made in a square pan or 2 loaf pans I am sure the Muffin mix has baking directions for a square or loaf pans.

I'd just make a regular muffin batter since I don't usually buy mixes. (perhaps an occasional cake mix on sale)  We do use Cinnamon Toast Crunch cereal in the summer so I could add some of that.  I like Nikki's idea of a square pan for a coffee cake type thing.

 Nellie, have you tried the Cinnamon Toast Crunch cereal? Look for the muffin mix with other muffin mixes. Yes i think it could be frozen. I also think that any other flavors could be used. Was I leading you "down the path of temptation"?  Surprised  Laughing If I had to see the picture I wanted everyone else to see the picture and swoon over it too! Not only that I left it as a background on the computer so that my daughter that lives with me had to see it too! And I kind of sent it to a couple girlfriends and made them swoon over it too!

i was at the store earlier       and that mix was 2.50     and a can of pie filling is not cheap
while i'm not pinching pennies       i hesitate to put that much plus the effort to make it        if no one has tried it yet
there's probably a way to make it scratch if we try

 $2.50 for that mix? Wow that's quite a bit. I have found that the cans of apple pie filling are cheaper than the others. Reading what you said here I instantly thought of Bisquick! I'm all for easy making! :) But still we could probably find it better and cheaper.
