Nancy - Thank you for the cookie recipe.  One of my sons makes these (or a recipe very similar to this) every Christmas, except his recipe calls for frosting.  He goes a step further and adds a bit of cherry flavoring to the frosting and it is delicious!  We are big lovers of chocolate and cherries together, so this recipe is a hit with all of us.

Cheri - I love your son's idea and, if possible, I'd like to hear more about it .............  Recently I made a big batch of chocolate cookies and turned them into sandwich cookies -- half with peppermint extract in the frosting and some crushed candy canes.  The other half I made with some chopped maraschino cherries.  That was "pretty" but had very little flavor.

For a bit more "cherry" flavor use some almond extract.  The almond tastes quite a bit like cherry when used in small doses.  I like doing 1/4 almond and 3/4 vanilla up to half and half depending on the recipe. 
I just play with the two flavors.  It seems if I am doing chocolate...and when am I not doing something with chocolate...I can add a bit more almond.  But it also tastes great with vanilla, try it next white or yellow cake you make just add a bit of extract for a little boost in flavor.

One of McCormick's cookie recipes - I can't remember the exact name but it sure mentions vanilla -- calls for 4 tsp. vanilla!!  That's another I can't wait to try.
