I'm making the cheese cake trio recipe, but this time around I would like to try to make Lemon flavor. I thought I would use lemon juice and the zest from the lemon, but I don't own a lemon zester, do

Cheese cake trio

I'm making the cheese cake trio recipe, but this time around I would like to try to make Lemon flavor. I thought I would use lemon juice and the zest from the lemon, but I don't own a lemon zester, does anyone have any suggestions on how I can do it?

Do you have a fine grater?  That will work just as well if not better than a zester.
If you don't have a grater then use a vegetable peeler and peel off the rind part then slice it in very very thin strips then if you need to cut the other way.  If any sugar is called for in the recipe put some sugar on the cutting board to act like an abrasive to make chopping easier.  The granulated sugar will absorb much of the oils rather than having your cutting board absorb the lemon oil you are working so hard to get. Hope this helps a bit.

I did have a grater, it's one from pampered chef.  I needed 2 teaspoons full. I just made sure I didn't cut down to far to the white part. I don't really have a recipe for this one so I'm just winging it. I wanted to try a lemon cheese cake so I used the basic recipe from the cheese cake trio and added 2 tablespoons of lemon juice and two teaspoons of zest from the lemon, then I put in about 2 or 3 tablespoons of the real lemon juice into the cheese cake. I also melted some white chocolate with some heavy whipping cream and blended that into the cheese cake as well. They are in the refrigerator cooling. (keeping fingers crossed that they turn out) Now the next thing is what should I use for a topping. I was thinking about adding a layer of sour cream then melting some of the white chocolate and adding some yellow food color and doing a lttle design on the top. what do you think? Thanks for your help with the lemon zest, it worked great.

That sounds so good,I have never made a lemon cheescake but I just might have to now.I agree use your finest grater and that will work great.Thanks for sharing.

The lemon and white chocolate sound great together.  Blueberry and lemon go well together but I think of that more as a summer combination.  The white chocolate is more winter holiday.
You could also take some lemon rind strips and place them in a pan with sugar and water and boil until you have a candied lemon rind. Remove from the pan and allow to cool.  They will get firm as they cool.  Dip them in dark chocolate and or white chocolate and place on the top of the cheesecake.  Candied lemon peel coated in dark chocolate tastes great.
