You all know that I'm stumbling into cake baking.  I do fine with cookies but ............... And I need a great recipe for carrot cake .  Got one?  Pretty please.

My carrot cake is out of the oven,cooled,frosted and in the fridge.I didn't add coconut my daughter in laws mom is allergic to coconut,I know she'll want to take some home.

Last night I frosted the pineapple-banana-nut-coconut cupcakes I made last night.  How many times have I made that stuff?!!? but still haven't repeated the carrot cake.

Nancy,  You need to make the carrot cake again.  I'm waiting to hear
what you have to say about it!!  Please!!! Please!!!!  It is really awesome!
You will love it!!!  You can have more than 1 that you really love.  I
totally love Gale's Italian Love Cake, the pineapple,banana, nut and
coconut cake, and the carrot cake.  Once you hit 60 you can love more
than 1 cake!!!  lol lol  Sorry!!! I am naughty again!!!!

That's right Carol,I'm not sixty yet,but I love a whole bunch of cakes.My favorites are walnut torte,Dobos torte and the apple walnut cake,remember these are my favorite but Iove a whole bunch more! lol

Carol - first thing is I have to remember to buy carrots!  lol lol ..... well, I suppose the REAL first thing is finding someone/someplace that will take the cake.

yikes ------- I'm well past 60.  I'm well past the half-way point in the 60s.

Nancy, I don't feel bad, Jan. 2 I'm going to be 65!! I am hitting the half-way
point. lol lol  Make sure you give the cake to someone who won't mind a
big piece taken out of the center!! lol lol  Which carrot cake recipe did you
use???  I know it wasan't mine because I posted my recipe after you made
the cake.

This is the carrot cake recipe I used ............  I can't speak for it   Wink   I've never tasted it -
CARROT CAKE :
PREHEAT OVEN 350* BAKE 50-60 mins or until toothpick inserted into the center come out clean

2 CUPS APF
2 CUPS SUGAR
1/2 TEAS.SALT
1 TEAS.BAKING SODA
2 TEAS.CINNAMON
3 EGGS
1 1/2 CUPS CANOLA OIL
2 TEAS VANILLA
2 CUPS GRATED CARROTS
1 -8 OZ. CAN WELL DRAINED CRUSHED PINEAPPLE
1 CUP COCONUT
1 CUP WALNUTS CHOPPED DIVIDED IN HALF
1/2 CUP RAISINS ( OPTIONAL )

Combine flour,sugar,salt, baking soda and cinnamon in a large bowl stir to mix well,set aside.in another bowl combine eggs,oil and vanilla mix well add this to the dry ingredients stirring well.Stir in carrots,coconut,pineapple, 1/2 the walnuts and raisins if adding.Pour into a greased,floured 13x9" cake pan and bake as directed.Cool in pan on a cooling rack.Frost with the frosting recipe used for the pineapple,banana walnut cake
Sprinkle the other half of the walnuts on top of the cake after frosting.

Oh You baked my recipe,You don't trust my judgement when I say something is good ? Surprisedlol I wouldn't have posted it if wasn't good you should know that by now.Undecided

Hi Angela,I have heard of this cake.Do you have a recipe? I've made Mock Mince Meat pie from green tomatoes years ago.

My mother always made green tomato mince meat every fall.  Since the frost came early where we lived, she'd pick all the green tomatoes, grind them up with apples, raisins, an orange and a lemon, cook it with spices and can it for pies all winter.  Also she had a nice mince meat cake recipe she made.

These cakes are rich from the oil I haven't tried altering any of the one's I have posted,apple cake,carrot cake or the banana pineapple walnut cake.However My mom in laws Poormans cake I did change a few things like using oil or butter in place of the lard the original recipe contained.I have added applesauce or pureed pumpkin to add moisture in her cake with good results.I'll have to try adding fruit to increase moisture.Even so these cakes are very rich and should be eaten in moderation.I wish I could convince hubby and son of this.lol I always have a small piece of something sweet in the evening with a nice cup of French press coffee and that satisfies my sweet tooth and gives me something to look forward to.
