You all know that I'm stumbling into cake baking.  I do fine with cookies but ............... And I need a great recipe for carrot cake .  Got one?  Pretty please.

I absolutely adore carrot cake(with or without pineapple)!  Every time we go to the local buffet, that's the first thing I look for lol.  The last few times there wasn't any :(.   I may just have to make my own.  Thanks so much for sharing your recipes.  They sound great.

                           Carrot Cake

Beat:  4 large eggs
          2 cups white sugar
          1 1/2 cups wesson veg. oil
Add:   2 cups sifted flour
          1 teaspoon baking soda
          1    "           salt
          2    "           cinnamon
Add:   3 cups grated carrots
Add:   1 cup chopped walnuts
Place in 13x9 pan  and bake at 325 degrees for 1 hour
Let cake cool before frosting!!

Frosting:  Blend together
                1  8oz. Phil cream cheese ( room temperature )
                1 stick(1/2 c.) butter or marg.  "          "  ( I use hand mixer )
Add:         1 lb. (box) powdered sugar
Add:         1/2 to 1 cup chopped walnuts
Frost cake and enjoy!!
We add walnuts to the frosting but you can also place them on top
of frosting.  This is a moist cake!! There are times when I'm in a hurry
and don't sift the flour.  I can't tell the difference.

next time you bake a cake, etc for a gift or untouched appearance at a function----------just make a cupcake size one out of your batter --------cook for a shorter time and ice with a small portion of the frosting and then you would not worry so much about it-----------

maybe you haven't heard because they are saving it for tonight-----or a sunday treat

Well I decided to make a carrot cake after my chicken came out.Just took the cake out of the oven and the house smells wonderful.

Tonight at church the young woman who got the carrot cake told me it was just too good believe.  She shared it with the pastor's family and they all loved it.  She said all agreed that they had never had a carrot cake that good.

Gale - how could you just decide to make a carrot cake?  I'm being serious .... do you keep that many carrots and stuff (like cream cheese) in the house?
I probably have 6 or 7 lb of butter in the freezer and 2 lb in the fridge but, gee, cream cheese can't be frozen.  I have part of a little bag of baby carrots.
hee hee I do have  7 big bananas waiting to be made into pineapple banana nut coconut cake!!

Hi Nancy,I do keep butter and carrots in the house at all times.We have salad everyday and I always have carrots on hand.I buy 2 bags of baby carrots every week.I keep them on hand for the salads and as a treat for the dogs and me.Every time I use any electric appliance that makes noise the dogs would go crazy and bark,I gave them carrots when I use the appliances and now that is treat time for them,no more barking lol! I have about 6 packages of cream cheese because I found them on sale for 99 cents.I'm making cheese cake for Christmas.Now I have to replace the one I used for the frosting.I used my recipe but left out the coconut and raisins,still very good and moist.The 9x13 pan is half empty so I guess the guys are enjoying it.I had one small piece. lol! Oh I forgot I bought 24 cans of pineapple also,on sale for 99 cents a can.I bought these to put in hubby's lunch, pineapple upside down cake, Watergate salad and what ever else comes up.I keep a well stocked pantry,freezer and fridge.The cream cheese I have is dated for March.

See Nancy you worried for nothingCry.As long as the ingredients are good and it's baked properly why wouldn't it be good? I have had both homemade and store bought carrot cake and the homemade definitely wins the prize every time.I've always wanted to own a small deli,the only difference between mine and the others would be homemade everything.I know people who own their own places and none of their bakery  items impress me,they use a lot of pre-made bakery items.HOME-MADE RULES!!!! lol! Smile

Nancy,   Wow!! Did you ever miss out on tasting the carrot cake!! You need
to try it!! At my parent's house my sister would cut the cake and I would take
everyone a piece and then we would get the center pieces! lol lol It was to
die for!! No end pieces and so moist! Have you ever thought of saying, "This
is the first time that I have made this cake!  Would you mind if I have 1 piece
to taste test it?  That way I can tell if it is up to my high standards".

All right!!  I know that I am really bad bad bad!!!! lol lol I would do that for
a piece of carrot cake. lol lol

lol lol -- I wanted a piece/taste sooo badly but I delivered to her at church school and all was very busy.  I told her that if it was all right  I was just putting it in her car and I had never tasted it.  Next time I saw her she said she had saved me apiece but didn't expect to see me then.
Next time we met she said it was all gone.

Nancy,  she saved you a piece and then it was gone!  She ate it!! Now you
know that the cake was really awesome if that happened!! I think you
should make another one and eat it yourself! lol lol

I also always have carrots and cream cheese in stock. Baby carrots for
hubby to take to work and regular ones for pot roast, carrot cake, etc.

Carol I'm going shopping later this morning to replenish my carrot and cream cheese stock along with other goodies.I sure hope the cream cheese is still .99 cents.When were growing up my mom would stuff cream cheese into celery and sprinkle with paprika and sometimes peanut butter.Very Good!

Gale,  I will be doing my shopping on Wed. I will pick up a couple more Phil.
cream cheese. They are $1.48 at Walmart. Still have enough carrots. I make
the celery with fresh peanut butter for hubby. He loves it.  I will have to try
the cream cheese with paprika on celery.  Sounds great.  Thanks for the tip.

I'm having clementines for my dessert tonight, hubby is working tonight I'll make a carrot cake tonight for dessert tomorrow.I'm making more chili for tomorrow the kids are coming for dinner.I'll have that done,then I can make homemade bread tomorrow morning.I'll be busy tonight.

Finally, after a long day (then a good nap!) I can get started.  First thing is another pineapple banana cake.  When that's baking I'll work on as many cookie doughs as I can.  They'll go in the 'fridge overnight.
I don't have any cream cheese so I'll have to go to Walmart late tonight or early in the morning.
