Hi Retaj --- I have no confidence for this but here's a try ...............
If you want something simple and easy try baking the lemon in a 9x13 pan.  When it's cold poke it full of lots and lots of "holes"..... use the handle of a wooden spoon for nice holes.  Then slowly pour on a can of sweetened condensed milk.  Cover all the holes.
Then pour on a jar of lemon (or coconut or anything you like) ice cream sauce.  Let these two sink in and be absorbed, then ice the cake with a lot of Cool Whip (or real whipped cream) and garnish with some coconut.

When I'm doing this with chocolate cake I use a jar of Smuckers caramel ice cream sauce in addition to the sweetened condensed milk.
When I'm doing a white cake I use a can of Cream of Coconut. 
Maybe Cream of Coconut would be good with lemon cake?

Retaj - I think some of the sweetened condesed milk and a jar of caramel sauce would be mighty good with carrot cake too.

I like making bundt cakes and the Lemon would go very well with some poppy seeds tossed in, a bit of lemon zest.  When it comes out of the oven a glaze made with sugar and lemon juice poured over the cake and allowed to soak in would make sure it is moist and lemony.
Blueberries also go well with lemon.
OR for something different...
Pineapple Inside-Out Cake
1 Package lemon cake mix
1 Can (15.25 ounce) crushed pineapple, packed in juice divided into two 1 cup portions.
1/4 Cup granulated sugar
1/2 Cup oil
4 large eggs
1 Cup powdered sugar, sifted
1 Tb lemon juice
Grease and flour a 10 inch tube pan or large bundt pan.
Pre heat oven to 350 degrees F.
Place cake mix, 1 Cup undrained pineapple, granulated sugar, oil, and eggs in large mixing bowl and blend on low speed for 1 minute. Scrape down sides and bottom of bowl.  Increase speed to medium and beat 2 minutes more.  The pineapple should be well blended into the batter.  Pour into prepared pan.
Bake until cake tests done, about 45-50 minutes.  Remove from oven and and place on wire rack, allow to cool for 15 minutes.  Invert onto rack, if using  tube pan invert again so cake is right side up.  Allow to cool completely, about 30 minutes.
Prepare glaze drain remaining pineapple and reserve the juice.  Combine powdered sugar and 2 Tb pineapple juice and lemon juice in a small bowl and stir until smooth.
Place cake on serving platter, spoon glaze over cooled cake.  Spoon pineapple on top of glaze.  Slice and serve.

Store cake covered in plastic wrap or under a cake dome for up to 1 week at room temperature. (without pineapple on top) Refrigerate if pineapple has been place on top of entire cake.
