I found a great recipe for a Carrot Cake on All Recipes and it is amazing. Here is the recipe.
Best Carrot Cake Ever
6 Cups grated carrots
1 Cup brown sugar
1 Cup raisins
1 1/2 Cups white sugar
1 Cup vegetable oil
2 tsp vanilla extract
1 Cup crushed pineapple, drained
3 Cups flour
1 1/2 tsp baking soda
1 tsp salt
4 tsp ground cinnamon
1 Cup chopped walnuts
In a medium bowl, combine grated carrots and brown sugar. Set aside for 60 minutes then stir in raisins.
Preheat oven to 350 degrees F Grease and flour 2 10 inch cake pans (I have also done this in a 13X9 pan)
In a large bowl beat eggs until light. Gradually beat in white sugar, oil and vanilla. Stir in pineapple. combine flour, baking soda, salt and cinnamon, stir into the wet mixture until absorbed. Finally stir in carrot mixture and nuts. Pour into pans.
Bake for 45 to 50 minutes in preheated oven until cake tests done with a toothpick.
Cool for 10 minutes on a wire rack before removing from pans. When completely cooled frost.
Best Cream Cheese Frosting
1 pound cream cheese
2 tsp vanilla
1 Cup butter
2 pounds confectioners sugar
Beat cream cheese until creamy, add in vanilla and butter beat until blended.
Add confectioners sugar and beat until creamy.
