I just made a carrot cake.  I have no idea where I got the recipe but it sure is good.
Here's the recipe .... I hope you will post your recipe.

CARROT CAKE
Greased 9x13 pan -- 350* -- 50-60 minutes
1 1/2 cups canola oil
3 eggs
2 tsp vanilla
.........
2 cups flour
2 cups sugar
1/2 tsp salt
1 tsp baking soda
2 tsp cinnamon
...........
2 cups minced carrots
8 oz can crushed pineapple - well drained
1 cup coconut'
1 cup chopped walnuts
1/2 cup raisins

Nancy, when I make the carrot cake I always cut the amount of oil.  Usually I only use 1/2 the amount and it comes out fine.  I really like carrot cake but don't think of making it.  You may have just reminded me how good it is.  Cream cheese frosting of course.

CREAM CHEESE FROSTING
8 oz cream cheese, soft and ready to go
1 stick butter, soft and ready to go
1 tsp. vanilla
1 1/2 cups powdered sugar



I took the cake to church this morning knowing I would catch my friend there.  LOL LOL ........ the young woman who was with her threw a fit about the cake.  My friend sliced it right there and started hand out pieces.  The minister's wife grabbed a piece.
It was a very funny happening and in seconds all of the cake was gone.
I'm making another tonight.

Thanks, Nancy, for your recipe. I've been looking for a new recipe as mine doesn't get any comments (which I interpret means it's not that great ;-)). I think my Dad will enjoy this for his 90th birthday in February.

It's wonderful, Verlee - but the center always sinks.  Every time I take that out of the oven the center is "up" - rounded like most cakes.  But, as it cools, it sinks.  It sinks a lot!  That doesn't seem to affect the taste or texture but it sure looks bad.  I cover it with the cream cheese frosting but ............

I found a great recipe for a Carrot Cake on All Recipes and it is amazing.  Here is the recipe.
Best Carrot Cake Ever
6 Cups grated carrots
1 Cup brown sugar
1 Cup raisins
4 eggs
1 1/2 Cups white sugar
1 Cup vegetable oil
2 tsp vanilla extract
1 Cup crushed pineapple, drained
3 Cups flour
1 1/2 tsp baking soda
1 tsp salt
4 tsp ground cinnamon
1 Cup chopped walnuts
In a medium bowl, combine grated carrots and brown sugar.  Set aside for 60 minutes then stir in raisins. 
Preheat oven to 350 degrees F Grease and flour 2 10 inch cake pans (I have also done this in a 13X9 pan)
In a large bowl beat eggs until light.  Gradually beat in white sugar, oil and vanilla.  Stir in pineapple.  combine flour, baking soda, salt and cinnamon, stir into the wet mixture until absorbed.  Finally stir in carrot mixture and nuts. Pour into pans.
Bake for 45 to 50 minutes in preheated oven until cake tests done with a toothpick. 
Cool for 10 minutes on a wire rack before removing from pans.  When completely cooled frost. 

Best Cream Cheese Frosting
1 pound cream cheese
2 tsp vanilla 
1 Cup butter
2 pounds confectioners sugar
 Beat cream cheese until creamy, add in vanilla and butter beat until blended. 
Add confectioners sugar and beat until creamy.

don't you think it funny that after church this morning I delivered two carrot cakes and then stopped by the grocery on my way home to buy more carrots and cream cheese.  LOL

I love carrot cake but never think to make it.  I do my carrots in the food processor since it is so quick.  I have lots of carrots now so will have to make it.

I found mine at All Recipes.  I have no idea why I gravitated to that one other than the 6 cups of carrots and soaking them with the brown sugar makes the cake very moist. I did try processing them in the food processor but the texture just was not right so I stick with the grated carrots.
