I had never even thought/known about it until I joined this site. 

Now I have cans of Carnation in my cupboard waiting for the next

time I make mashed potatoes or scrambled eggs.

I like the idea of adding it to scrambled eggs or frittatas. And for mashed potatoes, it should make them creamier, which is how we like them.

I wouldn't think of making mac-n-cheese with anything but Carnation evaporated milk.
I also found the best milk for making bread pudding is Carnation evaporated milk.
Have used it for mashed potatoes.  Most of my casseroles are made with Carnation evap. milk as well.

I have 24 cans in the pantry waiting for the opportunity to be used.I stock up when they go on sale and I use them in a variety different food ie: quiche

Renee, next time you have a recipe that calls for milk, or even try substituting the water called for in a cake, try using the evaporated milk.  It adds a creaminess and richness you don't get from regular milk.  The cake made with the evaporated milk tastes richer and moister. 
I will bet no one will know that you used evaporated milk ("That canned milk!") but they will know how rich and tasty things are. 
Try it in a few things and see how you like it.

I have to have Evaporated milk on my shelf as a staple as I make cream soups throughout the winter months.
