I just saw another post on the site and it reminded me. I will roast the bones from the turkey just a little more and make turkey broth for later next week so we don't get turkey overload.I cook

Gale, you're brilliant. I was so used to making soup from the carcass that I guess my mind couldn't figure anything else out!!!! Too late for this year, but you can bet I'll be cookin' up broth next year! THANK YOU!!

We love leftover turkey, mustard and a little mayo on any kind of bread. And I am especially partial to turkey salad, with turkey, lite mayo and celery, on wheat.

That's what we had last night.turkey salad on wheat flat bread,with lettuce tomato and bacon.So Good! I hate to baste my turkey and why I didn't think of this before,I bought chicken broth in the can (out of homemade) and pored the broth right from the can over the turkey.I hate when you go to lift the baster after getting the broth into it and it spits out all over the place.LOL! I just had to smack myself in the fore head after this one!lol lol lol I ended up with a gallon of gravy and it was so good,the mix of turkey and chicken broth together was great.

all gone now--------------i ate a lot of dressing, cranberry sauce and turkey this weekend

the carcass, with an extremely high amt of breast meat still clinging to it and both wings went home with my cleaning lady satuday for turkey salad , soup and broth, with all the scraps to feed her cats

yesterday my grand nephew, who had asked me to save dressing for him , he always comes to help me eat up dressing  ----------------came by on his way back to college station and took the quart i had saved plus the rest of the dressing and turkey meat ---------so it's all gone

I made my carcass soup on Saturday and it was wonderful.  I leave lots of meat on the bones, add all kinds of veggies and barley

GRANA  here; Here's something to serve w/ your carcass soup OR by itself  if you are ill:
 Zesty Turkey Pita Pocket

Liven up lunchtime with this tasty sandwich. The whole wheat pita is a good source of (whole grain) fiber while the spinach provides vitamin A.  Prep Time: 10 minTotal Time: 10 minMakes: 1 serving, two filled pita halvesINGREDIENTS 1/2 cup baby spinach leaves1 Tbsp.  Italian Reduced Fat Dressing1 whole wheat pita bread, cut in half6 thin slices cucumber5 slices  Thin Sliced Oven Roasted Turkey Breast2 Tbsp. Crumbled Reduced Fat Feta Cheese Jazz It UpTop filled pita halves with a light sprinkling of cracked black pepper.How to Soften Pita Halves for Easier FillingTo make pita halves easier to fill, soften them in the microwave before filling. I had a 20 lb turkey and there was not much left.  Had some the next day with the left over sweet potatoes, etc. and the rest we had some left over salad and we used the turkey on top of it.  Had to make a ham also because my one brother will not eat chicken or turkey.  Gave my other brother the ham bone.  He will make bean soup.  Gave them both some ham to take home and froze several pieces that were left.
