I just saw another post on the site and it reminded me. I will roast the bones from the turkey just a little more and make turkey broth for later next week so we don't get turkey overload.I cook the bones in a pot of water you can use broth to fortify it more.I strain the broth and discard the bones and freeze the broth.When I'm ready for the soup then I add in celery,parsley,carrots and onions,I put aside some of the meat and added it at the end.Noodles,dumplings or rice can be added also.Tomorrow I'm going to make turkey pot pie and turkey salad for sandwiches on croissants.
I had a 12 pound turkey for the 2 of us so I freeze one breast right away. I take all the meat off and put the carcass with odd meat in a bag and will make soup tomorrow. I don't strain my broth, but leave the bones in when I add all the vegetables for the soup. I also add barley or sometimes brown rice. The rest of the meat will be packaged and frozen, but I'll leave enough out for a couple meals nexg week.
I could not find croissants anywhere maybe everone had the same idea for turkey sandwiches.I found something even better,low carb flat bread.I made turky salad with mayo,celery and onions.I put that on the flat bread,then added luttuce,tomato and bacon.Wow was that ever good!
