I just saw another post on the site and it reminded me. I will roast the bones from the turkey just a little more and make turkey broth for later next week so we don't get turkey overload.I cook

I just saw another post on the site and it reminded me. I will roast the bones from the turkey just a little more and make turkey broth for later next week so we don't get turkey overload.I cook the bones in a pot of water you can use broth to fortify it more.I strain the broth and discard the bones and freeze the broth.When I'm ready for the soup then I add in celery,parsley,carrots and onions,I put aside some of the meat and added it at the end.Noodles,dumplings or rice can be added also.Tomorrow I'm going to make turkey pot pie and turkey salad for sandwiches on croissants.

I make turkey soup - pretty much like you do.  My broth is in the freezer and all the leftover turkey is sliced and wrapped.  I just had a very good sandwich and ~sigh~ finished off the slaw.
Tomorrow I'll have turkey with the left over gravy, dressing, potatoes, veggies.

I used to make turkey carcass soup when my sons were still living at home. But my husband is not a fan, so I've given up making this soup. It hurts for me to throw the carcass out, but I can't think of anything else to do with it. My thrifty side always tugs harder. ;-))

Hi Verlee,Why don't you just make a broth and freeze it you could add it to other things just for a nice flavor.

It is 4 AM & the first batch of turkey soup is in the crockpot. It was just the 2 of us for dinner & I had a 181/2# bird. I pulled 1/2 the breast off in 1 piece & sliced the rest of the other one. Everything else is seperated for several batches of soup & broth to freeze. I add celery, onions, parsley, corn & green beans & lots of meat. I will have plenty for the grandkids (they really like it) & I will have enough broth in case one or both of us get a cold or flu.
Wed. while the pie was baking, I cleaned, cut & cooked the carrots (enough for dinner, planned overs & to put in the soup), I also cut enough celery & onions to put in the soup & there is enough green beans & corn left for the soup.
I decided if I am doing all the cooking & cleaning, I will just make extra & not have to do as much when I do the soup.

I had a 12 pound turkey for the 2 of us so I freeze one breast right away.  I take all the meat off and put the carcass with odd meat in a bag and will make soup tomorrow.  I don't strain my broth, but leave the bones in when I add all the vegetables for the soup.  I also add barley or sometimes brown rice.  The rest of the meat will be packaged and frozen, but I'll leave enough out for a couple meals nexg week.

My mother would take the meat off of the carcass to use another time.  But, there would still be some meat that won't come off that easy, so she would put the carcass in pot, add water and cook it, then get the rest of the meat off, discard the bones, but put meat back in, add noodles or rice and vegetables and make a soup, and maybe make some dumplings.  Nothing went to waste.

I haven't made the turkey dinner yet, that's tomorrow lol.  I hate to waste the turkey that's always left on the bones so will make a soup with them.  My husband isn't too much on soup, but he'll just have to deal with it.   If I put enough veggies and noodles in there, then he can use a fork to eat it lol.

Sigh, I no longer have the oomph to deal with the stock pot to cook up the carcass and make broth. 
When my son is here for the holiday, he does the lifting so we make broth and freeze in pint containers to be the basis for good meals later.

Frances, I also have trouble lifting heavy things. I use the crock pot (that is why I end up making several batches of soup, since it does not hold as much as a stock pot), also I can let a batch cook over night. I make 2 batches then wash the crock pot & do another 2 etc.  I strain 1 pint from each batch for broth, then I load the container with lots of turkey, add the vegs. then add the broth (the soup is very filing esp. when noodles or rice is added). I separated all last night into 6 batches for soup, 1/2 the breast I took off in 1 piece, & the other 1/2 breast was sliced for dinner & there was enough for another dinner & a few sandwiches (the not so nice slices were cup up to add to the soup). The last batch is skimpy so most will be broth & I will add extra garlic (& mark the container "sick soup"  to be used for colds or flu). When the boys were young & sick, they named the chicken broth "sick soup" because they felt better Smile.

P.S. It is also handy having the crock pot on the counter near the sink when I do a roast etc. so I can skim & rinse the utensils or lift the meat out.

I have two meals in mind with the turkey carcass I took home.
Soup obviously and the other is a stuffed pasta, I use the large tube noodles and I make a batch of white sauce I mix turkey, onions that I sauté, mushrooms with some of the white sauce.  Stuff that into the pasta then I take the rest of the white sauce and pour it over the stuffed pasta sprinkle a bit of parmesan cheese over it and bake until bubbly and toasty brown.
Pretty forgiving recipe you can add pretty much what you want but I like it with the turkey or chicken, onions and mushrooms. But if there are leftover veggies they would go well in the mix also.

GRANA here;We boughabout 2# of cooked slced roast turkey today so I can have reruns just liket the rest  of you.There's about another 1/2# in the freezer from the last time I roasted a urkey .Hubby has not et complained that there have been no drumsticks.When he does;I'll buy  a cple,roast them up fo him;  I prefer   turkey breast myself.Wink 
MY RERUNS MENUS:
stuffing casserole( dressing)  w/turkey slices & gravy
baked yams w/ sliced turkey & cranberry sauce
 turkey sandwiches
 some was added to today's chicken Gumbo
Some wil be added to a hot & spicey Asian noodle soup,next week
 sandwiches/ wraps
turkey Nachos
chicken broth w/added turkey pieces carrots  & dumplings
sandwiches hot & cold
 " grab a slice; on the go"( drive bysnacking)
 sandwiches/wraps (a redundant reality of postThanksgiving mess syndrome
Acorn squash halves w/ turkey slices &optional gravy.

I could not find croissants anywhere maybe everone had the same idea for turkey sandwiches.I found something even better,low carb flat bread.I made turky salad with mayo,celery and onions.I put that on the flat bread,then added luttuce,tomato and bacon.Wow was that ever good!
