Caramel Broiled Oatmeal Cake

Here's a new recipe I just found that I'm going to try soon! Just thought I'd share with you all!

Caramel Broiled Oatmeal Cake

Cake:

1 1/4 cups boiling water
1 cup old-fashioned rolled oats
3/4 cup sugar
3/4 cup firmly packed brown sugar
1/2 cup butter, softened

2 eggs 

2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon vanilla
1 (10-ounce) jar (3/4 cup) maraschino cherries, drained, chopped
Broiled Topping:
1 1/4 cups flaked coconut
1/2 cup firmly packed brown sugar
1/3 cup butter, melted

1/3 cup whipping cream or half & half 

Heat oven to 350°F. Grease and flour 13x9-inch baking pan; set aside.

Stir together boiling water and oats in medium bowl; set aside. Meanwhile, combine sugar, brown sugar and 1/2 cup butter in large bowl. Beat at medium speed, scraping bowl occasionally, until well mixed. Beat in eggs until smooth. Add oatmeal mixture and all remaining cake ingredients except maraschino cherries. Reduce speed to low; continue beating until well mixed. Stir in cherries. Pour batter into prepared pan. Bake for 30 to 35 minutes or until toothpick inserted in center comes out clean. Remove from oven. Heat broiler. Combine all topping ingredients in medium bowl. Spread over hot cake. Broil 4 to 5 inches from heat, watching closely, until bubbly and lightly browned (2 to 4 minutes). Serve warm or cool. Garnish with whipped cream, maraschino cherries and mint leaves, if desired.

Tip

For easier cutting, use knife dipped in hot water.

This sounds so yummy! My mother used to make a topping like this one, but she'd put it on a plain cake.

The first time I ever had German Chocolate Cake my dad made it and he put on a frosting just like this.  I have always liked the frosting but have never made it myself.  I just might make this frosting on a chocolate cake and bring it to my sister for fathers day and we can both have a slice in memory of our Dad.

Thanks for sharing Verlee.  This looks so great but it will be a while before I can eat anything like this(had 8 teeth pulled yesterday).  Will just keep the recipe until I get my new teeth lol.

Verlee .... Thank you for such a great sounding recipe.
I have all the ingredients right here except the cream.  I sure wish cream could go in the freezer.
Don't you think kids will love anything that has cherries in it?

LOL LOL -- a few days ago I bought another new 9x13.  I make so much stuff one or two are usually in the dish washer and I need another.

Lisa, it's nice to know someone has tried this recipe and enjoys it! And I agree about the oatmeal...grabbing at straws maybe, but it works for me. lol

Thanks Verlee for the welcome back ! I just pulled the cake out of the oven and it looks and smells great.I'll let you know later how it tastes but I'm sure it will be good.

Verlee,great cake! Hubby and son both gave it a thumbs up,so I'm keeping this one.I was worrying that it would be moist enough and it is a very moist cake.Neither the frosting or the cake were overly sweet.This cake would be great with another frosting or just confectioners sugar sprinkle on after it cooled.Thanks for a great recipe !
