Candied orange peel & orange sugar

 This time of year I make orange sugar & candied orange peel. I have also made the peel out of grapefruit (not recommended) and limes. The sugars are good made out of anything-vanilla, oranges, maple...the list goes on. Do any of you make these also?

I have done this when a recipe calls for it but not just to make candied peel.
I did once try to make crystallized ginger.  Nightmare. All in all the stuff I buy in the store ends up being less expensive when you figure in the 2 days and all the sugar.

 Making different sugars isn't very much work at all. I just put sugar on cookie sheets, stir in orange peels that I cut up, and put in oven to dry. I have a gas stove so this works very well. If it's electric then put on low heat. Stir once in a while & that's it. Good on all kinds of things like pancakes & and ice cream & even cookies.

Candied orange peel you just cut up the orange peel. boil in a pan of water for about five minuets, drain well, roll in corn syrup, then roll around in sugar until coated, put in oven & let dry breaking & stirring once in a while.

Thanks for the tip Vicki. I just bought some more oranges so I will have to try the candied orange peel since my husband likes anything orange flavored.

I presume these would keep for a while in an airtight jar?

 I use the orange peel in recipes & on top of things. The peel will have the best taste of oranges & better than the jar you can buy. This is an old time thing when oranges were not so easy to come by & people didn't waste anything.Really good to eat!

Peel some oranges & cut the slices into any size you want. Put in a pan of water & bring to a boil for 5  minutes. Drain well & pat dry. Put peels into a bowl of corn syrup & cover them completely with the syrup. Then into another bowl with plain sugar & coat well. Put onto cookie sheets & separate. Put into a warmed oven that has been turned on low. Turn off the oven & keeping the door shut the oven will do the drying for you. If electric oven you will have to turn on to low & then off once warmed & electric will need to do this once in a while. Turn candied peel over when one side is dry & put back in the oven. When completely dry store in a covered container as damp will make them sticky again. You can put into an electric dehydrater.

For flavored sugars just pour a bunch of white sugar onto a cookie sheet stir in the flavour you want. Orange sugar is good. So is some vanilla flavourings using either the vanilla beans and/or the liquid. Maple is good. Peppermint flavour. A lot of things are good this way. Strawberry, lemon. When using liquid don't add too much at a time although the sugar will eventually dry. After stirring & spreading out the sugar put into the oven & turn on to low until warm & turn off. Stir every once in a while to help with the drying. Electric ovens will have to turn the oven to low & turn off & do this every once in a while. When sugar is completely dry store in a covered container. I use in recipes & do a bit of picking out some of the peels to munch. Yummy!

I'm going to start making my own vanilla extract sometime when I feel up to it.My niece gave me 15 Madagascar vanilla beans so this will be something new to me.They say after the extract is done to use the beans to flavor sugar.I'm going to have more time now and will be looking for new things to do.

Thanks, Vicki, for the ideas. When my 2 sons were small I used to use the plums from my neighbor's tree and make fruit roll-ups, similar to the process for making orange peel. A few years ago they confided that they took the roll-ups to school and sold them for a quarter each. LOL

When you peel the rind for usage "Do Not" include any of the white pith. It  is best to use a zesting tool.
