BLUEBERRY TRIFLE AWESOME!!!!

             BLUEBERRY TRIFLE

2 1/2 Cups Sugar divided
1/4 Cup + 2 Tablespoons Corn Starch
1 teaspoon Salt
8 Egg Yolks Beaten
1 Cup Water
1/2 Cup Fresh Lemon Juice
1/2 Cup Butter
3 teaspoons Vanilla divided
4 Cups Heavy Whipping Cream
12 Blueberry Muffins Homemade or Store Bought torn into pieces
6 Cups Fresh Blueberries

In a large sauce pan mix 2 cups of sugar,corn starch and salt mix well
add beaten egg yolks and water whisk well to mix
cook over a medium heat stirring occasionally  for 15-20 minutes until thick
Remove from heat.Add lemon juice,butter and 2 teaspoons vanilla
Mix well.Place plastic wrap over custard as not to form a skin.
Refrigerate for @ least 2 hours.After 2 hours continue with recipe
Beat whipped cream and 1/2 cup sugar until stiff peaks form,add in remaining 1 teaspoon vanilla
In the bottom of a trifle bowl or other large clear glass bowl Place 1/2 the torn blueberry muffins
Sprinkle 3 Cups of the fresh blueberries over the muffins.
Spread 1/2 the whipped cream over the blueberries
Spread 2/3 of the lemon custard over the whipped cream.
Next put the remaining blueberry muffins over the lemon custard
Add the remaining blueberries
Fold the remaining whipped cream into the lemon custard
Spread this evenly over the top.
Blueberries and lemon zest can be sprinkled on top for garnish.
Refrigerate for 4 hours before serving.

This is the recipe that my son gave me
He has made it a few times already,in fact I want this to me my new birthday cake!
It was found in a Taste Magazine

Mary I think this is a recipe that could be made on a smaller scale.Cut in half or fourths.

i just don't like blueberries,         never have        and anything with lemon or lime   sets my teeth wrong
probably because of one or more drugs i'm taking
although for some reason i can still drink pink lemonaid flavored kool-aid

Gale, this sounds fabulous. I love trifle. And with the temperature at around 105 all this week, it sounds especially delicious and refreshing.

Gale,  Thank you so much for another great recipe. This will be perfect
for this week. We are having the same weather that Verlee is having
and also humidity. Blueberries are on sale this week so it is perfect
timing.

Wow!! I love blueberries.....this trifle sounds decadent!  Might be good to make for a Sunday school breakfast so as I don't over indulge! heeheeheeWink

I think that all triflerecipesare meant to be made for dinner parties and served in a glass serving bowl. But, I'm sure that you can cut the recipe down in size to serve fewer people. And, instead of blueberries, I'm sure that you can use a different type of berries. I don't care for whipped cream, would you be able to use a frozen whipped topping?

I think that all trifle recipes are meant to be made for dinner parties and served in a glass serving bowl. But, I'm sure that you can cut the recipe down in size to serve fewer people. It looks like all you would have to do is use the thawed topping just like you would use the whipped cream.  Just like the whipped cream be gentle when folding the pudding mixture into the topping.

You are all welcome! I love this,it's awesome.Millie I have never froze this so I don't know.I never have this left over for more than a day.I make sure of that.You can make a smaller portion,I personally wouldn't freeze it,there's just something about the goodness of the fresh blueberries that I feel would suffer from being frozen.

i think freezing would break up the lemon cream as well
