I think the brown sugar will make this a much moister and a richer flavored bread. Difficult thing is I love fried bananas so when I get bananas it is a toss up between letting some get a bit over ripe of tossing one or two in a fry pan with some butter and sugar. I usually don't have a problem because my daughter won't eat bananas once they begin to get a bit soft. Just when I think they are at their best! So I often "pilfer" bananas from them.This recipe will be at the top of the list with the next batch of bananas that I get.
I sure agree with Nikki --- I'd rather make a bundt. Springforms make me nervous
