BANANA BREAD

Banana bread Preheat oven 350* Bake 1 hr. or until done.

2 Cups mashed ripe bananas
1 Cup oil
4 Eggs
3/4 Cup sour cream
2 Tabs orange juice
in a medium bowl mix all 5 wet ingredients.Set aside

In a large bowl mix all ingredients below
3 1/2 cups flour
3 cups brown sugar
2 teas.baking soda
2 teas.cinnamon
1 1/2 teas. salt.
Combine wet and dry ingredients mixing well.(optional stir in 3/4 cup chopped walnuts.)
pour batter into 2 large bread pans which are greased and floured I use my spring form pan.Bake @350* for 1 Hour or cake tests done,This is a very moist bread

Thanks Gale .... all brown sugar!?! I frequently do that in cookies and it works so well. Are you using golden brown or dark brown? This is one recipe I can't wait to try. I gotta' go buy some bananas

Interesting that the brown sugar is added with the dry. Often sugar is considered a "wet" ingredient.
I will have to try this one. I love the idea of adding sour cream and the 2 cups of bananas is more than i usually add in. (at least with the recipe I have been using.)
And I don't think the nuts are optional in a banana bread they are a must. (unless my Grandson is helping then the batter gets divided in two and all the nuts go in one loaf..lucky me)

me too!-----------i don't have any more bananas in my freezer------and it's too hot to even think of going out--------but i'll try this soon----------i have all the other ingredients-------but i'll do muffins

for yrs i made my banana bread in 2 batches because i thought my son didn't like nuts in it------------and thats his favorite baked item-------he likes it breakfast------lunch -----dinner--------one of the few sweets he eats-----------------------the one day i he asked if i had any more in the freezer-----------i said yes, but only with nuts----------and he told me that he had outgrown that aversion a long time ago

Always nice to see a new twist on an old favorite. I have never used orange juice before,,,sounds interesting. I usually add chocolate chips to my banana bread. I'm sure Nestle would be happy to hear that!

Mmmmmm, does this sound yummy, Gale. My banana bread recipe (I think it was my grandmother's) sometimes gets dry, so I'm anxious to try this out. My hubby loves over-ripe bananas, so I have to hide them when they're ready and I need some for baking use!

I think the brown sugar will make this a much moister and a richer flavored bread.
Difficult thing is I love fried bananas so when I get bananas it is a toss up between letting some get a bit over ripe of tossing one or two in a fry pan with some butter and sugar. I usually don't have a problem because my daughter won't eat bananas once they begin to get a bit soft. Just when I think they are at their best! So I often "pilfer" bananas from them.
This recipe will be at the top of the list with the next batch of bananas that I get.

Gale you mentioned you do this in a springform pan. What size pan do you use? Do you think it could be done in a Bundt pan adjusting bake time of course. I think I would rather have a Bundt cake than loaves.

Nikki,my spring form pan is 10" x 2 1/2 " I use the spring form,because I'm lazy and I hate to have to wash two pans.I would think a bundt pan would work just fine.
