NO BAKE PINEAPPLE, CREAM CHEESE, PECAN SNOWBALL COOKIES

NO BAKE - Cream Cheese, Coconut, Snowball's Recipe  1 package (8 ounces) cream cheese, softened. 1 can (8 ounces) crushed pineapple, well drained. 1 cup chopped pecans 3 cups flaked coconut.  In a small bowl, beat cream cheese and pineapple until combined then fold in the pecans. Cover and refrigerate for 1 hour.  Take out of refrigerator and roll into 1-inch balls; then roll the balls in the coconut. Refrigerate for 4 hours or overnight. one of the ladies who shared this on fb       got a comment    about  chocolate regret           the next poster advised her to freeze the balls and dip them in melted chocolate
pineapple /cream cheese has been the southern hostess standby for at least 50 yrs as I remember
we used to make cocktail sandwiches with 3 layers  w/ chicken salad in the middle of two layers of the stuff
I could probably add the pecans and coconut  but don't know if my altered tastebuds could stretch around the chocolate as well

This recipe sounds a lot like a recipe that my Mom used to make.  As I remember it, she would keep them refrigerated until time to serve.  Thank you for the memory, Nellie.

Dipping it in chocolate makes it sound even better.

Hard to go wrong with coconut and pineapple.  Perhaps if some of the coconut was mixed with the cream cheese and pineapple it wouldn't be so messy to eat.  might  just try that.  All those ingredients are staples in my house.

This sounds so good but i think they should be keep in the ice box as they may be to soft to eat.
