In Response to Apricot Coffee Cake:
This is so good - so very good. I've been making it for many years APRICOT COFFEE CAKE 350 degrees -- greased and flour 8" pan -- Bake 35-40 minutes Drain one can apricot halves - save the juice Beat one very large egg until thick and lemon colored. Mix in 1/3 cup of apricot juice 2 Tbls melted butter 1/2 tsp lemon extract 2/3 cup flour 2/3 cup sugar 1/2 tsp baking powder 1/8 tsp salt cinnamon and sugar Add the dry stuff to the liquid things and beat just until mixed. Pour into greased/floured 8" pan. Cover with the drained apricot halves ... don't worry when they start to sink. Sprinkle the top with a lot of cinnamon/sugar mix. Bake 350, 35-40 minutes

This sounds great. I bet it would be good using almond extract. The flavors of almond and apricot go so well together. And a little almond extract goes a long way.
By the way Nancy did you see the "cookie" on the Home page? The Choco-Oat-Caramel bar cookie? I have made these for years (minus the chocolate) and they are great. I posted a review with you in mind. These would also be great with the addition of coconut and pecans. It is a bar cookie you can play with.
