APRICOT COFFEE CAKE

I love this stuff.   A few nights ago I was making dinner for a friend and decided this would be a good dessert.  Then I realized I could not share one - so I made two.

APRICOT COFFEE CAKE
1 can apricot halves (drain and save 1/3 cup juice)
2 Tblsp melted butter
1 egg
1/2 tsp lemon extract

2/3 cup flour
2/3 cup sugar
1/2 tsp baking powder
1/8 tsp salt
Cinnamon/sugar for topping
Grease and flour an 8' round baking pan
Heat oven to 350
Beat 1 egg until thick and lemon colored. Add 1/3 cup
apricot juice, melted butter, lemon extract and salt.
Add flour. sugar, baking powder and salt. Mix well.
Pour into greased/floured 8" round pan and cover with apricot
halves. They will try to sink - that's OK.
Sprinkle on a generous amount of cinnamon sugar.
Bake 35-40 minutes.

I'll eat anything with a cinnamon sugar topping!  Including Apricot Coffee Cake!!!  It's delicious!  Thank  you for sharing the recipe Nancy!

Nancy, thanks a lot!!! Here I am trying to lose a few pounds before my trip and you go and do this to me!!!!
 I love apricots..my Grandma pronounced them "ape-ri-cot" and for the longest time I never tried a fresh one. 
I think dried, dipped in chocolate is my favorite way to eat them though. 

I am going to try this and possibly for dessert on Friday so I can have some for breakfast without thinking I am eating "cake" 

I am going to make one change though, I will use almond extract rather than lemon.  I think Almonds and apricots were made to go together.

Me too Renee --- any cinnamon sugar recipe is great.  Snickerdoodles!!  Good old Snickerdoodles.  The very first recipe I ever used and the first cookie I ever baked ....... 1961.

Nikki -- I think the lemon extract is absolutely PERFECT for this coffee cake.  And now you've forced me to bake yet another one today to test the almond. g-r-r-r-r-r-r-r  Another one!!

One thing about making any sort of cake like this to give away......   
I am not fond of making any little cake like this 8" one in a foil pan to give away.  That gets expensive. 
So last time I made this apricot one I baked it in one of my precious Wilton pans.  After it had cooled a bit I turned it out onto a good paper plate, then turned it again to another good paper plate. 
Viola!   A plate I and  the recipent could forget.

Nancy, I made this cake when you first posted the recipe a while back.  It turned out really good.  I think I have another can of apricots so may have to do it again.  Sometimes I make something, then forget about it for a while.  After a reminder, I'll make it again.  Thanks for the reminder

Judy - this recipe wasn't taped to the inside of my cabinet doors so I haven't thought to make it for ages.  When I thought of it I panicked - I was so scared I couldn't find it.    And that's one of those ancient recipes I can't remember ever being without.
