It may not necessarily be that the kids don't like nuts, they might be allergic to them. Better to be safe than sorry and leave out the nuts in anything that you take to school. Or, like you do with the pineapple banana cake, make 2 batches - the first without nuts and the second with nuts.

Fran - I left out the nuts for the Apple Cake. Half the kids at school don't like nuts. I'd love to have them taste the pineapple banana cake and IMHO it needs nuts. So, after the holidays I'm going to make two pineapple banana cake - one with nuts, one without. A group that size needs two cakes anyhow. And, yes I freeze the pineapple banana cake made into cupcakes with no frosting. I I thought I could pull , let's say 6, from the freezer and frost those to take to someone. However the very top layer of the cupcakes is almost "wet" when I take them from the freezer. The taste is still fantastic but they are too soggy to frost. Makes me no difference - I love having them in the freezer so I can grab one anytime I want. Pure luxury.
