It may not necessarily be that the kids don't like nuts, they might be allergic to them.  Better to be safe than sorry and leave out the nuts in anything that you take to school.  Or, like you do with the pineapple banana cake, make 2 batches - the first without nuts and the second with nuts.

Fran - I left out the nuts for the Apple Cake.  Half the kids at school don't like nuts. I'd love to have them taste the pineapple banana cake and IMHO it needs nuts. So, after the holidays I'm going to make two pineapple banana cake - one with nuts, one without. A group that size needs two cakes anyhow. And, yes I freeze the pineapple banana cake made into cupcakes with no frosting.  I I thought I could pull , let's say 6, from the freezer and frost those to take to someone. However the very top layer of the cupcakes is almost "wet" when I take them from the freezer.  The taste is still fantastic but they are too soggy to frost. Makes me no difference - I love having them in the freezer so I can grab one anytime I want.  Pure luxury.

Apple cake will be made for the New Year.Since we will be having pork this will be a great dessert.

Well this is going to be made later today,an encore presentation! 4 people want the recipe,they don't have computers so I'll write it out once and have copies made.I'll probably have to make a couple more this weekend.

Whew ---- I spent 15 - 20 minutes searching for this recipe . ( I looked in "What are you baking?" or something like that.)
I have to have some sort of cupcakes for a funeral dinner at church Saturday.
Thank goodness I have apples in the 'fridge.  The streets are too snow covered to go out shopping.
I wish I had some bananas -- I know the banana, pineapple, walnut cake will work just fine as a cupcake.
I know the apple cake is great and much loved where ever I take it.  I sure hope it will work as cupcakes.

I should make an apple cake as I have some apples in the fridge that aren't as crispy as I like for eating.  Will be perfect for baking

ahhhhhh -- Judy that's what I was wondering about.  The apples in my fridge are not crisp enough for my taste. So I was wondering if they were crisp enough for baking.   Thank you.

Oh I forgot,I froze a piece of the apple cake and I wasn't too happy with the results.I don't remember who asked me about freezing it ,I wouldn't ,just eat it,it will last a few days and seems to even be better the second day.When I bake these things I always share with a few of the neighbors and they share with me.It's nice because we get to taste a lot of different things.

A couple days ago I made a batch of pineapple, banana, coconut etc cupcakes to give to some older men at church.  They were very happy.
And on my way home I went by the grocery to get more apples ....The great apple cake is my next project.

Tonight after finishing the two batches of macadamia coconut cookies I made the pineapple, banana coconut, walnut cake and then the apple cake.  Whew!!
