CRANBERRIES & CREAM CHEESE BLOCK
1 cup water 1 cup sugar 1 pkg fresh or frozen cranberries (12 oz) 1/2 cup apricot preserves 1 Tbls lemon juice 1/3 cup slivered almonds 1 8 oz cr cheese block Assorted Crackers
In a saucepan, over medium heat, bring water and sugar to boil without stirring. Boil 5 minutes and add cranberries. Cook until berries pop and sauce is thickened, about 10 mins. Remove from heat. Cut any chunks of apricots in the preserves into small pieces. Add to cranberry mixture. Stir in lemon juice. Cool and add almonds.
SHRIMP DIP
1 8 oz cr cheese 1/2 cup chili sauce 1/2 cup light mayonnaise 2 cans already cooked broken shrimp 6-7 Tbs horseradish
Rinse shrimp with lemon juice.
Beat cr cheese, chili sauce and mayo. Add horseradish and blend. Fold in shrimp. Serve with crackers or fresh veggies.
REUBEN SPREAD
1 jar (16 oz) sauerkraut, rinsed and drained 1 pkg (8oz) cram cheese cubed 2 cups (8oz) shredded Swiss cheese 1 pkg (3 oz) deli corned beef, chopped 3 Tbs prepared Thousand Island salad dressing
Serve with rye bread or crackers.
