In Response to Appetizer recipe for New Year's Eve:
For appetizers on New Years Eve,I'm putting together a meat and cheese tray,sopressada,fontinella cheese and some good crusty Italian bread.Olive oil with spices for dipping and roasted garlic. For the roasted garlic preheat oven to 400* Bake for 1 hour Cut the tops of the garlic bulb off,I'm making 6 whole bulbs,place on foil enough to close completely.Sprinkle the garlic with olive oil and close the foil,roast as directed.When done place the roasted garlic bulbs on a nice serving plate sprinkle with a little kosher salt, black pepper and a little more olive oil sprinkled on. Serve with toasted cocktail bread.I allow one bulb of garlic per guest.The cloves are squeezed out on the toasted bread.The garlic is not strong at all,very delicious and mellow in flavor.

Thanks Gale. I love roasted garlic and dipping bread in garlic flavored olive oil. We use a lot of garlic in cooking.
