AMISH POTATO SALAD

Amish potato salad

6 potatoes cooked peeled and cut into med. dice
1 small onion chopped
1 cup celery chopped
1 cup carrots chopped
1 teas.celery seed
4 hard cooked eggs peeled and chopped
toss all ingredients in a large bowl,set aside


Dressing
2 eggs beaten
1/2 cup sugar
1 teas. corn starch
1/3 cup apple cider vinegar
1/2 teas.salt
1/2 cup milk
1 teas.yellow mustard
3 Tabs.real butter

1 cup Mayo or salad dressing such as Miracle Whip

In a sauce pan whisk together 2 eggs,1/2 cup sugar,1 t corn starch,1/3 cup apple cider vinegar,1/2 teas. salt,1/2 cup milk,1 teas. yellow mustard,
Cook over a medium heat until thickened,stir often so it doesn't burn.After it is thickened stir in 3 Tabs. butter.Set aside to cool completely in the refrigerator.When cool stir in 1 cup mayo or salad dressing.Pour the dressing over the potato mixture and toss lightley until all is  mixed in well.Chill in the refrigerator for a few hours,even better overnight.You can always add other things to your liking,but this is great just the way it is.

Yummy. I haven't made potato salad in several years. This would be great served with our Easter ham leftovers!

Smilehave made Amish potato salad grew up on it . my family was from  pa  dutch county thats all my mother made. i still make it. thats like pa dumplings  they are fluffy not flat

Gale, thanks for posting the recipe. I am the only one in the family who likes the Amish potato salad & baked beans (maybe because I was born in Pa & had eaten in Lancaster), I copied the recipe & will try to make 1/4 of it for me (now & then I buy a # of it from the deli, but it is not the same taste I remember)

Gale, thanks for reminding me of this great recipe.  Mine is only slightly different but I can see hubby's broad smile to see it on the table!  Don't know what I'd do without this helpful site.  Just when I can't think of a thing to make, someone posts a great recipe or talks about a meal they've made or are going to make.

You're all very welcome! I love to go to Amish country, we try to go @ least once a year.I love their chicken,I dream about it! lol I love their potato salad.When I taste something I'm pretty good at figuring out what is in it.I then go looking through my cook books or on line to find a recipe.My Mom in law was Pa.German,her and her sisters were amazing cooks.My MIL would start with a cheap cut of meat and turn it into a meal fit for a King!

OH...that sounds delicious!!  Luckily, I have all the ingredients, and will make it as soon as I can.  I love potato salad!!  Debbie Macomber just mentioned in her latest email that her Father used to eat it for breakfast (and other times, also).  I love it; but can't see myself eating it for breakfast.  Oh heck!!  I think I'll at least give that a try!!  We only live once!

Dumb question for you Gale, do the carrots get cooked at all?  What size pieces are the carrots and celery cut into?...ok that was 2 questions...

The carrots are raw,I did them in my food processor just pulsed until I thought they were small enough,you could grate them too ,the big holes The celery I cut into fourths long way then 1/8 -1/4 " wide cuts some where inbetween.
