AMISH CUSTARD PIE

This is something that is near and dear to my heart


            AMISH CUSTARD PIE 
1/3 cup sugar
2 teaspoons flour
1/2 teaspoon salt
3 eggs
3 cups milk
1/4 teaspoon nutmeg
One (9-inch) unbaked pie shell
Combine sugar, flour, salt and eggs and mix until smooth. Heat milk to boiling point. Add 1 cup hot milk to egg mixture. Pour that into the remaining hot milk.
Pour into unbaked pie shell. Sprinkle nutmeg over top. Bake at 350 degrees for 45 to 60 minutes

if i had a pie shell this would be in my oven right now
i've always liked custard pies      especially the egg custards

When I was a kid my Grandma made custard a lot.  I loved it.  I don't think any other kids I went to school with even knew what custard was.  They knew only cooked pudding and instant pudding from a package.  We had "real" pudding and custard.  Not to mention tapioca and rice pudding.  I loved all of it. ...ok now I can blame my Grandma for my weight problem.

Nellie, do you have a Trader Joe's available in your town? If so, they have a great frozen pie crust. In fact, when I make pies now, my family cannot tell the difference between homemade and Trader Joe's! It's so convenient to have a box of crust available in the freezer. Then you could have your custard pie!!!

actually they just opened 2 here in harris county        the closest is over 30 miles     and both are located in highly congested areas  so i won't be going
i've never been able to properly roll  out a crust     i guess because of my hand and wrist problems

i used to take crisco and flour to my mom and she would make me a dozen at a time for my freezer, as she did for all of us--------------------------i really miss them
i usually keep a box of the pillsbury crusts from sam's in the freezer     but i recently gave the last 2 to a friend    and when i went to sam's last week i forgot to get more
when i go to the grocery again    i plan to pick up a pkg

Gale - Thank you for the recipe.  My Mom used to make a pie very similar to this and I always loved it.  I grew up always having homemade pudding, pies, cakes, breads, etc. - my Mom baked every Tuesday while I was growing up.  I think I will have to try your recipe for my family.  Thank you for bringing back some memories.

Thanks Gale for a great recipe.  I love custard pie.  This recipe will be made this weekend so I can share it with my "Brunch Buddies"!!  I am a believer that Nutmeg makes just about any baked product taste much better!!

Nellie, I posted this "tip" a while back but...
I was watching an episode of Cooks Country or it could have been America's Test Kitchen and they were making pies.  The suggestion they gave for a crust that is easy to roll out but still is tender and flaky is to use vodka as a part of the liquid.  The idea behind this is you can increase the amount of liquid making the crust easier to handle and roll out but the vodka evaporates leaving the crust flaky and tender.
I have made several pies using the alcohol as all or part of the liquid and I have to say they turn out great.  For a lemon pie I used Lemoncello and I made a chocolate pie and I used amaretto and it is not that you can taste the flavor of the alcohol used but the whole pie just tastes great.

I'm so glad you all like this recipe.This also brings back great memories of my childhood.When I was pregnant with my second boy for some reason I couldn't drink milk so I ate a lot of custard,pudding and yogurt.I did have a big baby however 10# 4 oz. lol lol lol

I'm so glad they liked it.I always order a slice of this pie when we go to Amish country.They give you a whole bunch of choices but I always pick this.
