This is something I make for any get together that has an oven available. Everyone loves them.

AMERICAN SANDWICHES - makes 24
1/2 lb American cheese shredded (I use Velvetta)
1/2 lb bacon, fried, drained crumbled
2 Tblsp chopped ripe olives
2 Tblsp onion, finely chopped/shredded
2/3 cup mayonnaise (just enough to
moisten and hold together)
1 bag dollar rolls (small bread rolls) sliced in half
Mix everything and spread on each roll half. Bake
at 350* for 8 to 10 minutes until cheese is bubbly
and starts to brown a bit.
Flavor improves if mixture is made a day ahead.

Sounds good if you leave out the olives. There are no kind of olives I really care for.

Judy -- these contain such a tiny amount of black olives they won't be missed a bit.  I think they are added just for the color.
These sound so plain, I think you would be surprised at just how good they taste.

hee hee -- Nellie and Judy --- when I'm making these for ME, I add EXTRA black olives. 
Maybe if you added a bit of chopped pimento you would have some color?  (I don't like pimento)

Thanks Nancy, this sounds like something I can make for the kids when they come to the beach.  They are renting a beach house so we can all be together for a week.

Nancy - Thank you for this recipe.  It sounds tasty, I definitely like your hint at the end to make the mixture a day ahead to enhance the flavor. I will make one mixture with black olives, probably a bit more than the recipe calls for because my husband LOVES black olives, and the other without olives.
