I have a fantastic recipe for a Cranberry Almond Pound Cake.  But as often as I make it the cost of the almond paste gets out of hand.  Does anyone have a good recipe for almond paste?&nbsp

I have a fantastic recipe for a Cranberry Almond Pound Cake.  But as often as I make it the cost of the almond paste gets out of hand.  Does anyone have a good recipe for almond paste?  The recipe calls for 1 can, 7 or 8 ounces in size.  As a matter of fact I have one in the oven right now and the house smells wonderful.

The recipes I have seen for the almond paste all call for the addition of simple syrup and/or egg whites.  I used the simple syrup and did not like the results, although the birds had no complaints when I made seed cakes from my "failure".  The paste was missing the wonderful almond aroma I get from the cans of paste.  I guess I could add almond oil or possible extract.
Thank you for the suggestions.  Oh, I did use my Vita Mix it works wonders on things like nuts and this time of year horseradish.

I put the amount of almonds (or chocolate covered almonds(powdered from Sams club)) in the blender until it forms a paste or almost a paste. You also may need a drop or two of oil for the moistness. I use just the almonds.

I would think placing the almonds in the blender would work. I know you can make your own peanut butter that way. I have a Vita Mix blender and I use it all the time to make peanut butter, cashew butter, etc. Honey roasted peanuts make delicious peanut butter.

Astonishing!!  To learn that *I* can make almond paste ..... WOW.
I sure will try it.  The local Wal-Mart sells beautiful shelled almonds in their produce dept.
