First, the Nantucket Cranberry Cake is great. I love the tartness of the cranberries. Not overly sweet and just a nice crunch from the sprinkle of sugar on top. Went very well with the pork I made for dinner. The cranberries cut through the fatty richness of the pork. The cake is much like a recipe I found on All Recipes for a Cranberry Streusel Pie. Very simple pie with a streusel topping. I almost think I like the cake better, no pie crust and I loved the crunchy cake top to this. Now the Ginger Squares has been a favorite of mine for years. Just the right bite from the ginger. The reason I add more ginger is the first time I made the recipe I made a mistake and doubled the amount of crystallized ginger. The second time I made it I followed the directions and found I liked the first better with more ginger so I have continued to make it that way. Bakery1 G, if you like ginger I am sure you will like these. If you look on the King Arthur Flour site and look at the picture of these they always do not come out the way they are in the picture. Sometimes the darker base comes to the top and the struesel sinks a bit. Either way they taste great. I always have crystallized ginger in the house as I love a slice of it in my tea or just one or two slices in hot water as a kind of ginger tea.

Thanks Nikki for the info. I do like ginger and I'm going to try some in my tea at your suggestion. Don't you just love this board where we get so many good ideas!
