Autumn is here!  I figured that I would share 2 recipes.  One is a favorite of mine.  My have shared it before but it is well worth another run.  The other is one I just found yes

Autumn is here!
I figured that I would share 2 recipes. One is a favorite of mine. My have shared it before but it is well worth another run. The other is one I just found yesterday. Came in an email from King Arthur Flour.

This one is from King Arthur Flour and sounds so delightful. I am making this for tonight.

Nantucket Cranberry Cake
1 Tb melted butter
2 Cups fresh or frozen cranberries, chopped
1/2 Cup chopped walnuts
1/2 Cup granulated sugar
2 large eggs
3/4 Cup melted and slightly cooled butter
1 Cup granulated sugar
1 Cup flour (King Arthur)
1/2 tsp salt
1 tsp vanilla extract
1/4 tsp almond extract
Coarse white sugar for sprinkling on top of cake
Pre heat oven to 350 degrees F.
Lightly grease a 10 inch pie plate or a 9 inch square pan.
Melt 1 Tb butter and drizzle it in bottom of pan.
Spread nuts and chopped cranberries in bottom of pan.
Sprinkle with the 1/2 Cup of sugar.
In a mixing bowl, beat together the eggs, 3/4 Cup melted butter, sugar, flour, salt, and extracts.
Spread over the cranberries, using a spatula or wet fingers.
Sprinkle with coarse sugar.
Bake cake for 40 to 45 minutes, until a tester comes out clean.
Remove cake from oven. Serve warm or room temperature. With or without whipped cream or ice cream.

Odd thing, this second recipe is also from King Arthur Flour.
This one is only if you love ginger.

Sticky Ginger Squares.
Squares:
1 1/4 Cup flour
2 tsp ground ginger
1 tsp ground allspice
3/4 tsp salt
1/4 tsp baking soda
1/2 Cup diced crystallized ginger (I like to add more than the 1/2 cup I go 1 cup)
1/4 Cup molasses
2 large eggs
1 1/3 Cup firmly packed brown sugar
1/4 Cup butter, melted
Topping:
1 1/3 Cup flour
1/2 Cup butter
1/4 tsp salt
3/4 Cup packed brown sugar
1/2 Cup diced crystallized ginger (again I double this)
Directions:
Pre heat oven to 350 degrees F.
Line a 13X9 pan with parchment
To make squares:
In a medium bowl whisk together the flour, ginger, allspice, salt, baking soda and crystallized ginger.
In a separate bowl,stir molasses, eggs, butter and brown sugar
Combine the wet and dry ingredients, beat until smooth.
Spread batter in prepared pan, set aside.
To make topping:
Using a pastry blender, a mixer, your fingers....
Mix together flour, salt, brown sugar until it is fairly well blended, some chunks of butter can remain. Mix in crystallized ginger. Set aside
Bake squares for 15 minutes. Sprinkle on streusel topping.
Bake another 30 minutes or until a deep golden brown.
Remove squares from oven, run a knife around edges of pan to loosen. Allow to cool then cut into squares.

( I usually put the base in the oven while I am making the topping rather than setting the base aside while making the topping.)

Look for crystallized ginger in some of the sections in "ethnic" markets where they have dried fruits, nuts, bulk spices. I can usually find it for around $4.50 a pound. Forget the spice aisle in most grocery stores!

I've had the sticky ginger recipe in my drawer to try for almost a year now. I'd be very interested in how that one turns out Nikki. Please post and let us know. As for the cranberry recipe, I have one for a cranberry coffee cake that sounds similar and we love it.

The first time we talked about this I looked and looked for crystalized ginger and Finally found some in King Arthur's site (wow - that's a fantastic site!) I ordered a bag and then found some in the local Walmart sold by McCormick --- tiny, tiny glass jar. Sooooooo I have lots of the ginger and I have used just a wee amount. I gotta' get going.

First, the Nantucket Cranberry Cake is great. I love the tartness of the cranberries. Not overly sweet and just a nice crunch from the sprinkle of sugar on top. Went very well with the pork I made for dinner. The cranberries cut through the fatty richness of the pork.
The cake is much like a recipe I found on All Recipes for a Cranberry Streusel Pie. Very simple pie with a streusel topping. I almost think I like the cake better, no pie crust and I loved the crunchy cake top to this.

Now the Ginger Squares has been a favorite of mine for years. Just the right bite from the ginger. The reason I add more ginger is the first time I made the recipe I made a mistake and doubled the amount of crystallized ginger. The second time I made it I followed the directions and found I liked the first better with more ginger so I have continued to make it that way.

Bakery1 G, if you like ginger I am sure you will like these. If you look on the King Arthur Flour site and look at the picture of these they always do not come out the way they are in the picture. Sometimes the darker base comes to the top and the struesel sinks a bit. Either way they taste great.

I always have crystallized ginger in the house as I love a slice of it in my tea or just one or two slices in hot water as a kind of ginger tea.

I use dried cranberries in oatmeal, I toss a small handful in when I am heating the water so they plump up.
I use both fresh and dried in "my" Cranberry Almond Pound-cake.
I use them in salads..
I love them in pumpkin bread
I will also add them to stuffing for chicken, pork or turkey.
I have also tossed some in turkey or chicken soup. (just my bowl not the whole pot)
any recipe that calls for raisins I have been known to use cried cranberries.

I would guess that the dried cranberries could be used in place of fresh.
I would rehydrate them. Soak them in warm water until they have plumped up. Most dried cranberries have added sugar so I would cut back on the sugar that you sprinkle over the cranberry and nuts in the bottom of the pan.
Other than that I think it would work.
The cake was so good that I think it is worth trying. Give it a try and let me know how it works out.

When you rehydrate the cranberries I bet you could infuse even more flavor if you used cranberry juice, apple juice or cider for an even more zip you could use orange juice. Lots of possibilities with the flavors. I just might try this myself! Any of the juices would add even more sweetness so cutting the 1/2 Cup of sugar to 1/4 would probably be enough.
