2, count 'em TWO awesome pies

I "experimented" with 2 pie recipes for dessert yesterday and they were both so good.
As I have explained in past posts I am a Chocoholic so there is no surprise one was chocolate.  Here is the first.
Chocolate Truffle Pie
12 ounces semisweet chocolate chips
1 1/2 Cups heavy whipping cream
1/4 Cup sifted confectioners' sugar
1 Tb vanilla extract
1 (9 inch) prepared pie crust. (Pie crust can be chocolate cookie crust, or I used a baked pastry pie crust. I think it would be good with a nut crust as well.)
In a microwave dish combine chocolate chips and 1/2 of the cream (3/4 Cup).  Cook on high for 1 to 2 minutes, stirring every 30 seconds until smooth. (Or just heat cream on stovetop to almost a boil and pour over chips stir until smooth.).  Cool to room temperature.  Stir in the sugar and vanilla.  Set aside.
In a small bowl, beat the rest of the cream until soft peaks form.  Beat in the chocolate mixture on high speed 1/3 at a time, mix well and spoon into crust. (hold back about 1 spoonful of the mixture, this is optional.)
Refrigerate at least 8 hours before serving.
LICK THE RESERVED FILLING OFF SPOON.
I served the pie with a bit of unsweetened whipped cream.

Awesome Pie #2
Cranberry Streusel Pie
1 pound fresh or frozen cranberries
3/4 Cup white sugar
1/4 Cup flour
1/2 Cup packed brown sugar
1/2 Cup chopped walnuts
1/4 Cup flour
1 tsp butter or margarine (I must admit I used a bit more..1 Tb butter)
1 recipe pastry for a 9 inch single crust pie.
Smash berries.  Stir in white sugar and 1/4 cup flour.  Pour into pie crust.
Mix chopped nuts, brown sugar, 1/4 cup flour and the butter with a pastry blender or fork.  Mixture will be crumbly.  Sprinkle over pie.
Bake at 350 for 45 minutes.
Great pie, not overly sweet.  Might be my new favorite fruit pie.  Think it would be good with apples mixed in.  I will definitely experiment with this one.

I copied both of them.

I had my son pick up a new printer cartridge for me today.  I've been printing so much lately.  This one is not out yet, but it won't be long at the rate i'm going.

I really like cranberries (& walnuts) so I am looking forward to making the cranberry pie, hubby will not eat cranberry anything, but I have hidden them in a few things & he never knew, maybe he will think "cherry" & try it, it not, I will have to eat the whole pie myself Tongue out.
