As I only use whole wheat flour I would like to know if the amount of ww flour is the same as the white flour amount. Are there any other changes needed in the recipes?

ww flour vs. white flour

As I only use whole wheat flour I would like to know if the amount of ww flour is the same as the white flour amount. Are there any other changes needed in the recipes?

DONNA W;  GRAN A  here;I use ONLY W/W. flour.....RULE of THUMB:  for each cup o f AP flour SUBSTITUTE one cup  WW. FLOURles 2TBS & increase BP from one to two tsp  per cup of flour used; hope his helps!?

Granna/Ann------Whenever i replace it i use the amount of white flour on the recipe
it turns out fine!

Donna, while we have not tested this substitution in all of our recipes, you should have good results by substituting the same amount of whole wheat flour for all-purpose or white flour. Hope this helps!

RETAJ O; I did too & thought  my results were fine until I was"informed" by a pro baker) to do as I posted & my results are much improved, especially brownieswhich are now much mote tender &fudgey ; cannot tellI  I used whole wheat flour... I've even been accused of not really using whole wheat flour.Wink
Are you using stone ground W.W. flour OR WW pastry flour?; that could make a difference !;whatever worksfor you or meCool

The only place I found whole wheat flour is a specialty store, occasionally in a natural foods store or online ordering

I know King Arthur Flour has a white whole wheat flour.  I have read that you should not substitute more than 1/2 the flour, in some recipes even less, with whole wheat.

I usually use whole wheat flour in a recipe.  I feel is is more nutricious.

I don't use it often since my husband doesn't like whole wheat, but I have seen some recipes where the ww is combined with som white flour.

Thanks for the info everyone.  I have whole wheat flour at home but haven't tried to bake with it yet.  Good things to know.

Unfortunately , for me, I have not had your succes w/using = qty of  flour for AP; my cookie s muffins were dry & tough.Since reducing the amt ofww flour  a little  &  increasing BPas directed on a can ofBP;I now have ighter more tender  ww cookies muffins.Perhaps it'sthe brands of ww flour we usethat that makes the exchange amounts different for each of us???
