whole wheat bread tast bad after 2-3 days. why?

I baked whole wheat bread, very nice and came out nice. The issue was 2-3 days after when I tried to eat, it taste not good as the first day. what could be the reason for bread to change it's taste ?

I baked whole wheat bread, very nice and came out nice.
The issue was 2-3 days after when I tried to eat, it taste not good as the first day. what could be the reason for bread to change it's taste ?

First thought is that home baked bread does not have the preservatives that store bought bread has.
Second thought is that that the whole wheat does not last as long as a wheat that has been fully processed, the bran contains more oils and can become rancid.  Although I would doubt that this would happen in a few days it might hasten the breakdown of the oils.

Are you refrigerating the bread?  That might keep it longer but refrigerating will cause it to dry out a bit faster so wrap it well. If you do not go through bread quickly you could even freeze 2 or 4 slices so they can be thawed quickly or toasted.

Did you proof the yeast ? Where was the flour stored ? Where was the bread stored after baking ?

Are you in a warm damp climate?  Did you store your bread in a plastic bag or container?  Tons of things can affect the taste of whole wheat bread.

for me i find honey makes a difference in tast after a couple days

Storage after baking is key to keeping bread fresh.Homemade bread lacks all the preservatives that store bought bread has.It must be wrapped properly and stored in a dark place.My mom always did this and I do also,I keep my bread for a day or two if it will be used in the oven when not in use.I store it on a cookie sheet that way it can be removed quickly if I need to use the oven.I saw a suggestion of storing it in your microwave also it's dark and some what airtight..Make sure it is wrapped well.I'm not a chemist but after the yeast has been fed and it dies during baking,fermentation will start after a day or two and I think this is what you are tasting.If I won't be using my bread up within a day or two I slice it using an electric knife and wrap it in plastic wrap and then into a freezer bag and then into the freezer.The slices can be removed and the slices thaw very quickly to be eaten as is or toasted.I bake bread often it is one of my favorite baking projects.It rarely makes it to the second day in my house.Keep baking and enjoy!

 Hi PATRICK;
 My BEST GUESS is that the  natural oils in the whole wheat flour went rancid,Frown Unfortunately , this hppens  if these fragile oils aren't kept   cold enough( refrigerated) to naturally preserve them .Such a shame Surprisedyour hardwork & good first day  results ended up spoiling.
Next time  refrigerate  the  cooled baked loaf for up to a week; should be good for that long.
Also yeast breads should houldbe kept  below waist height ( below countertop)to keep them from spoiling too fast. If my hubby was there the first day; yo would have hadno leftoversto be concerned about. He's a fresh whole wheat bread junkyWink; as am I Smile
; we never have leftovers o worry  about;I bake the doughin several mini loaves  and/ or pizza crust  shape, cool, pkg tightly freeze up to a month w/o spoilage.
