I have a gluten-free chocolate cake recipe that is fabulous...perfect taste, texture, and even look.  I would like to use this cake recipe for other cakes, but it  calls for 3/4 cup of cocoa powder.  

what would be a good  substitution for the cocoa powder if i want to make a strawberry or vanilla cake?
