 My grandaughter cannot drink milk. I usually make the pumpkin pie from the can of Libby's pumpkin pie filling.  It calls for evaporated milk which she cannot have. She does drink soy milk.&

 My grandaughter cannot drink milk. I usually make the pumpkin pie from the can of Libby's pumpkin pie filling.  It calls for evaporated milk which she cannot have. She does drink soy milk.  Is there any way that I can substitute soy milk for the evaporated milk?

You could try soy milk.  Take 3 cups of soy milk, cook over med-low heat until reduced by half, equals 1 1/2 cups evaporated milk.

Or you could use this:  1 cup soy or rice milk powder, 1 cup boiling water.  Combine in  blender, blend until smooth.

You could also use almond milk, boiled down until it thickens.

Fran, you can certainly use soy milk instead of the Evaporated Milk in our Pumpkin Pie recipe! Use the same amount of soy milk and add one tablespoon of cornstarch to the recipe to aid in firming up the pie. So you know, soy milk pies will be slightly darker in color; the texture will be just slightly softer and may be slightly sweeter than a pie with evaporated milk. Enjoy!

i never use evaporated milk I just use  rel milk but i make a pumpkin custard pir not  rel punkin pie
