libby's pumpkin roll

I made a libbly's pumpkin roll and it split  on top.  Last year I made several some were okay others not.  Am I cooling the cake to long or not enough?

I've made several pumpkin rolls, some crack some don't.

There is a good video on this site as well for the pumpkin roll.
I have not made one but I have heard if you allow the cake to cool to long and try to unroll it to much it can crack.  Also over baking the cake can leave it a bit dry.  Also I understand if you trim the edges from the cake it is easier to roll and un roll.  The edges are a bit dry and can cause the cake to crack.

Heck, it will taste good cracks or not. Also, people will know you did not buy it.
If serving several people, just slice, put on the plates & put a small scoop of ice cream or extra whipped cream on the plate covering the crack.  Wink

Experienced chefs also have mishaps.

OHHHH that sucks! It was so easy to view them here.  Maybe our swapped recipes will show up on UTube.
