I'm looking for a good quick bread for Christmas gifts. I need a recipe that will make 10 mini loaves. I bought the aluminum mini throw away pans that hold 1 3/4 cups of batter.

I'm looking for a good quick bread for Christmas gifts. I need a recipe that

 I made the quick bread for gifts and they loved it and it is what we do each year for the holidays.

I make quick breads all the time for gifts. I just use my regular bread recipes. Normally there is plenty of batter to go around. If not double the recipe!

I have a great Pumpkin bread recipe I have not made it in small pans because the recipe makes 3 large loaves so it would make like a gazillion (slight exaggeration there!)little loaves. I have also added whole fresh cranberries to the pumpkin bread as well as dried ones both are a great addition.  I posted that recipe a while back.  I also posted a recipe for a Cranberry Almond Pound Cake.  You can get both of them easily by clicking on my name and all the posts I have made will come up and they should be easy enough to find.  If you want them and can't find them let me know and I will be happy to post them again.

I figured it may take a while to look for the recipes so here they are.
Pumpkin Bread
4 eggs
3 Cups sugar
1 Cup oil, or use half oil and half apple sauce, have not tried it with all applesauce
1/3 Cup water
1 30 ounce can pumpkin pie mix. (I always use 2 15 ounce cans of pumpkin and add extra spices and it has always turned out.)
3 1/2 Cups flour
2 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1 1/2 Cup chopped dates, I have also used raisins or cranberries, dried or fresh.
1 Cup chopped walnuts or pecans
Pre heat oven to 350.
Grease 3 loaf pans, 9X5
In a large bowl of mixer, lightly beat eggs.  Gradually beat in sugar, oil, water, and pumpkin.  Add the flour, baking soda, salt and cinnamon; mix well.  Stir in dates and nuts.
Divide batter between pans.  Bake 55 minutes to 1 hour or until the bread begins to pull away from sides of pan.  cool completely on wire racks.

Cranberry Almond Pound Cake
1 Cup dried cranberries
2 Tb amaretto
3 Cups flour
1 tsp baking powder
3/4 tsp salt
1/2 tsp baking soda
1 can, 7-8 ounces almond paste
1 Cup butter
2 Cups sugar
1/2 tsp almond extract
5 large eggs
8 ounces sour cream
2 Cups cranberries(whole fresh or frozen)
Grease and flour a tube or large Bundt Pan.
Pre heat oven to 325
In a small bowl, combine dried cranberries with amaretto, set aside
In another small bowl, grate the almond paste, set aside
In a medium bowl, combine flour, baking powder, salt, baking soda.
In large bowl of electric mixer at medium speed, beat butter until creamy.  Gradually beat in sugar; beat 3 minutes or until light and fluffy, scrape bowl with spatula.  Beat in almond paste and extract.  Add eggs one at a time, beating well between additions.  Reduce speed to low; add flour mixture alternately with sour cream beginning and ending with flour.  Beat just until blended.  With a spoon stir in dried cranberries, with soaking liquid and fresh cranberries.  Spoon batter into prepared pan(s).
Bake cake for 1 hour and 30 to 40 minutes or until a toothpick comes out clean.
Cool cake in pan for 1 hour.  Remove cake from pan and finish cooling on rack.

I have done this in mini loaf pans (5.1/2X30 and the bake time for 7 mini loaves was about 35 minutes.

I'be been baking this for years.  I usually use two loaf pans - once in a while the mini loaf pans.

CINNAMON POUND CAKE

1 pkg yellow cake mix
1 pkg instant vanilla pudding
3/4 cup oil
3/4 cup water
4 eggs
2 Tblsp imitation butter flavoring
---------------- 
2 tsp cinnamon plus 1/4 cup sugar  **I double this mixture**
----------------
Mix everything (except the cinnamon)... Beat for 8 minutes.  Pour small amount of batter into greased bundt pan.
Sprinkle on some of the cinnamon/sugar.  Add more batter then more cinnamon/sugar.  End with batter0.
Bake at 350 for 45 minutes

GLAZE
2 Tblsp milk
1/2 tsp vanilla
1 Tblsp butter flavoring
1 cup powdered sugar

I  make this  and I add some chopped toasted pecans to the cinnamon sugar mixture.  Fantastic for a brunch.  Have this on hand after your "Black Friday" shopping. Made in the little mini bundt pans it would make a pretty gift with some flavored teas or hot chocolate.

Oh, wow nikki -- what a great idea... I love pecans on just about anything but I've never thought to put them on this quick bread.  Delicious!!
And they would be beautiful sprinkled over the top.

I remember the first time is saw this recipe and was so cynical about "imitation butter flavor".  I tried this recipe with no great expectations at all.  It's great and I make it over and over.
