I've saved and printed the recipe for " Gourmet Chocolate Chip Cookies" which look absolutely wonderful. It calls for 1/2 cup butter and 1/2 cup veg. shortening.  I don't understand the combinat

I've saved and printed the recipe for "Gourmet Chocolate Chip Cookies" which look absolutely wonderful.
It calls for 1/2 cup butter and 1/2 cup veg. shortening.  I don't understand the combination of shortenings -
Is it necessary?
Can I simply use 1 cup of butter?

Butter melts at a lower temperature than the shortening or margarine.  So the cookie begins to spread out a bit.  Margarine keeps the cookie "puffier".
The butter gives a crisper cookie where the shortening will give a softer cookie.
I think the combination will give you a cookie that will be texture that is a blend of the two.
The Food Network had a show that went through the differences of the two.  It was an Alton Brown show, Good Eats.  You might be able to find the information on the site.  There was a whole list of ingredients that make a difference, butter VS margarine, White sugar VS brown sugar, Milk VS water.  I hope you can find the info.
For me I like the taste of butter.  I am not a fan of the hydrogenated fats in baking.  Some of the products available now are OK but you have to watch that they do not contain a lot of water.

It's such good information I think this should be one of those posts that stay at the top.

I've always used  butter in my cookie recipes -- Today I  changed.

Nancy, with all your baking(not to mention your ice cream!) I wanna live next door to you.  Hope the cookies turn out great.  Then again it is a chocolate chip cookie what can go wrong?  Even a "failure" isn't really an absolute failure. It is just something else in disguise.

Don't try to be nice yet .... Wink ... I just made a batch of Spice Oatmeal Cookie dough using 1/2 cup butter and 1/2 shortening.  I'll bake those this evening.  And I'm starting more of those Ice Cream Sundae cookies.   If these aren't Perfect, I'm holding YOU responsible. lol

wish i could bake like that haven't made a big batch of cookies in a few years .we are diabetic and splenda don't make the cookies as good as sugar

Millie --  a dear friend is diabetic and I keep trying to bake cookies for her..   I use a lot Splenda and that Splenda Brown Sugar mixture.
