Please help Judy O is you can.  She was thrown completely out until she changed name -- always that "gooey" message.
Now she's getting nothing except that again.  She just can't get in.

I agree with the others that What's for dinner, dessert and in your oven should stay put.I for one enjoy reading others menu's it gives me the opportunity to come up with more ideas for my menus and also to ask other members for their recipes if they care to share.I also like the weather forum, just to see what the weather is like on the other side of the country. We have plenty of space to start new forums.Just clean up the old threads from a few years ago.

Susan, we are checking our systems to see if we have this recipe available. All I am able to locate at this time is a Pumpkin Spice Cookie with Lemon Frosting and Pumpkin Bars with Lemon Glaze. Is it possible that the name was not Cinderella Pumpkin Cookies? If you can provide a description or some of the ingredients, I will try looking into this further for you.

Hi VBB,I have a question,my husband brought me a 25# bag of pastry flour, first question is this the same as cake flour? I know that if I want to use cake flour in place of APF I have to add 2 tablespoons to every cup called for in the recipe.Example 1 cup APF= 1 cup + 2 Tablespoons of cake flour,I think this is correct ? My next question is will the baked product be the same quality as if I used APF? Any Information would be greatly appreciated. Thanks in advance.Gale G.

Hello Susan D!
I found a recipe for something like it:
Pumpkin Cookies with Lemon Icing

1/2 c. shortening
1 c. sugar
2 eggs, beaten
1 c. pumpkin(canned)
2 c. flour, sifted
2 tsp. baking powder
1 tsp. salt
2 1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/4 tsp. ginger
1 c. raisins
1 c. nuts

Cream shortening and eggs, beat in sugar, add eggs and pumpkin. Mix sifted flour, baking powder, salt and spices together. Add pumpkin mixture, mix well. Add raisins and nuts. Drop by teaspoon onto greased cookie sheet and bake for 15 minutes.

LEMON ICING
Combine 2 cups of confectioners' sugar with 1 tablespoon lemon juice and milk as needed.
Makes 3 dozen.

Gale, from the information we have available, I actually do see that cake flour and pastry flour are the same and will work the same in recipes. You would use the same amount the recipe calls for when using either item. The difference would be if you were to substitute these flours in a recipe that is calling for all purpose flour. Hope this helps! Happy baking! Smile

Gale if you are interested I just posted a recipe to my recipe box so you should be able to get it for Chocolate Chip Cookies.  The recipe calls for 3 Cups of Pastry Flour.  I am going to post it in Chocoholics now.  The recipe also calls for bread flour.

Please, I need help with my meringue!

My family loves chocolate & coconut meringue pies...but nine out of 10 times my meringue weeps.
It doesn't matter if the humidity is low or how stiff I beat the whites, it still weeps.  Doesn't effect the
taste, but makes the crust soggy.  I would really appreciate any suggestions!
Thanks!

It will be interesting to see if anyone has a suggestion for you.  I have given up expecting a meringue that does not weep.
I have tried it all.....
Waiting for the filling to cool before topping with meringue......
Topping the hot filling with meringue.....
Making sure the meringue touches the crust all the way around......
Making sure the whites are not too stiff....
Making sure they are stiff enough...
Adding superfine sugar...
Adding less sugar....
Adding the sugar a little bit at a time..adding it all at once..adding it early or late....

I most often have a meringue that weeps.  It has caused me to weep!

So if anyone can provide a sure fire method I will be grateful as well.

Wish I could help but I'm very meringue "challenged".  I've even had trouble with the meringue cookies running all over!
