Falling cake

I live in Colorado and have never had a problem baking in the high altitude until recently. I have a cake recipe everyone loves when I bake it.  Lately it falls in center, I mean sinks, I have tried adding more flour, less flour and it also calls for a cup of boiling water so I tried to use less water as well.  I need so advice on how to keep this cake from falling.  It has even been oozing over the sides and I know I'm not filling the pans to full.  One pan will not ooz over and the other will.

Try  putting the same amount of batter in both pans.

 When I go to make the cream cheese frosting for the carrot cake and fill the center with it and every body loves it.
