I have a Martha Stewart COOKIES cookbook and some of the chocolate recipes call for "Unsweetened Dutch-process Cocoa Powder".
Some call for "Unsweetened Cocoa-powder (not Dutch-Process).
What is the difference?
I'm going to post this question in two places so more people see it sooner.

Hi, Nancy. Dutch Process/Alkalization: The process of treating cocoa liquor, cocoa nib or cocoa cake with a solution of potassium or sodium carbonate. It gives improved colors to the final cocoa powder, and gives cocoa powder particles better suspension properties when they are used in a drink (commonly known as the Dutch process). Substituting 'dutched' for 'non-dutched' powder is not recommended. Nestlé Toll House Cocoa is non-alkalized (non-dutched). -Kelly

I just saw this other than what Kelly said I understand the ph is different on one vs the other.  Not sure what one is what. But it does make a difference when you make something like Red Velvet cake where an acid, buttermilk, is used.

Just a note.....Dutch process cocoa is usually more expensive than regular cocoa!
